I have never poached a whole salmon, and would prefer not to try it first in front of an audience, however, I do have several good recipes for poached salmon that are delicious cold. I don’t know if I have a pan large enough for a whole salmon, but I could do several smaller pieces and end up feeding as many people. I can’t cook as well as Zenster, but I’d be willing to give it a shot–I can guarantee edible, but perhaps not elegant.
Zenster the link in your post didn’t work, but I’d love to see your recipe.
Oh, and I’m sorry you (Zenster, obviously) can’t make it just because I’ll (we’ll) miss your company.

KKBattousai and I will be there. He’s thinking of making his tasty garlic mashed potatoes. I’m leaning towards chocolate chip cookies… but since we seem to have a lot of desserts, I’m thinking of making my grandmother’s shoyu pork.
We’re also in for Powell’s and the rose garden. Our drive takes about 3 hours, though, and I have no idea what time we’re going to leave here yet.
I have a good friend visiting from the east coast in the days leading up to the 'Fest. He’s due on an airplane on the 2nd - I’m assuming early in the day, but I don’t know for sure yet. Just FYI - I may be a bit late if his plane doesn’t leave until afternoon.
… and I still have to figure out how to get that cake on the back of the motorcycle. Hmmmmm.
(and for the record, it’s a strawberry/yogurt/whipped cream angel food cake)

In other news: FairyChatMoose has arrived, and a fetching young lady she is too. I’ll bring our old digital so that those who wish can have their picture taken with her. (And who wouldn’t?) I want to put up a web page if I can figure out why I haven’t been able to FTP since we got DSL.
As for food, I’m leanng towards makeing Jambalaya with chicken and shrimp. Anybody have any seafood allergies? Hate chicken? It will be spicey but not hot. I don’t subscribe to the thoery that dumping a bunch of cayenne in it makes it cajun. Or I could make Cuban rice. (contains ham and mushrooms, also spicey) Any suggestions?
You’ll just have to come another time Zenster. Dagnabit! Don’t make me come down there!
I’m thinking maybe Joel and I will bring a hot dish afterall. I haven’t made “enchilada lasagna” in a long time, but it’s quick, easy, and tasty. We can bring some salsa, sour cream, and tortilla chips to go with, too.
How are we set up for beverages, napkins, paper plates, and utensils?
I’m still trying to figure out my schedule for that day… I’m supposed to be in Salem that weekend, but I should be able to make it up for at least part of the day… We’re meeting at the church at 2pm, right? I think my husband isn’t going to be able to make it though. I won’t know for sure until the day before what either of us are doing, so I’ll check in before the big day and let everyone know.
If I do come, I’ll make eh, something, in a crock pot the night before and bring it along as well. I’d volunteer to be the utensil person, but if I can’t make it, you’d all have messy faces and sticky hands and it’d be all my fault. I’m make some sort of kosher food, how’s that sound? (I don’t keep a strict kosher diet, incidentally, nothing to worry about. I just don’t eat fish or pork) I also make all sorts of fun vegetarian dishes, if anyone prefers that.
I can bring a guitar, but not play it worth crap.
Ooh! Maybe I should try to talk the guitarist I play with to come along… He’d have a great time, and I think he was just planning to kill tine in Salem all day otherwise. I’ll have to see about bringing him.
Real plates and eating utensils are provided. We might need cups, though.

Anyway,
I just kind of threw that out. Hadn’t really decided what to bring…But that does seem like a good choice. We can use an appetizer-type thingy, I guess, and it means I don’t have to cook, which is good for all of us, believe me.
So does anybody have any cheesy preferences/aversions? I like stinky cheeses myself. Blue and gorgonzola, stuff like that. Brie is good too. I know a store with a really good cheese department (and bakery), so anybody have any input?
I thought you might have just thrown it out, but I thought I’d note it just in case.
Besides, if some smart aleck were to come in and announce, “I’m bringing bread and cheese!”, you could beat him down with a stick, point at my post, and say, “Me first, BITCH!”

Ferrous, Jarlsberg Swiss is always a crowd pleaser and can be had inexpensively from Trader Joe’s or Costco. I think T.J.'s is cheaper, though.
