Depends - with your typical yellow onion, if you want to bring out the sweetness, you’ve got to go low and slow to caramelize them. Walla Wallas are sweet enough that you can get similar results in just a few minutes. They’re only really available from June to August, and IMO they’re a lot better than your typical sweet onion. Vidalias don’t even compare.
