Have you considered lactose free dairy? Both of my parents had issues with dairy in combination with coffee (even milk on their cereal), but when I picked up some lactose free once when I was there, they got along fine with it. Made breakfast a whole lot more pleasant for them.
I do, too, but this was just shy of being mush. It tasted fine, but the texture was, well, ugh.

FCM, glad daughter is back safe and sound. And like you I use skim milk exclusively, but in my case mostly with cereal or Carnation Instant breakfast.

It’s a great suggestion, and if I had any difficulties with dairy other than with coffee, I’d consider it. But I’ve been drinking regular milk all my life with no issues other than rich whole milk or half and half with strong coffee, and I solved that one by drinking it now with reduced fat milk. My issues are with too much fat in the milk combined with the acid in the coffee. By reducing the fat, I can drink my coffee with low fat milk and no problems at all. I’m sure others will benefit from your suggestion, though!
Okay. It’s pretty good. Very rich, and if you prefer a more classic chocolate chip cookie, there are probably better recipes out there. In order to try it as recommended in the recipe – meaning 5 minutes after it comes out of the oven – I had to < wrist to forehead > eat dessert before dinner. The sacrifices I make!
But it’s tasty. Crispy cookie on the outside and soft underneath.
The recipe suggests it makes 4 generous servings. I would amend that to gluttonous. They also suggest serving it with ice cream, which would further raise (lower?) the bar to positively porcine. I ate an eighth, sans ice cream, and it is plenty.
Tonight I’ll learn if it freezes well.
