More leftovers! Soup and stuffed sweet potatoes. And a Milky Way Fudge candy bar for dessert.
BBQ (aka pulled pork) sandwiches and beans simmered in tomato sauce with sage and garlic. Big, sweet, lovely blackberries. And a couple squares of dark chocolate with almonds for dessert.
Aldi Green Bag Chicken (GBC). I’ve been a fan of the Red Bag Chicken and tried the Green Bag last night for the first time. 5/5 stars, superb. There’s a little Italian seasoning, some parmesan flavor, these would go really well with red sauce.
I’m making some extra for lunch tomorrow. The only downside is the 40 minute oven time.
1 lb of Grim Reaper hot wings (made with cinnamon and carolina reaper peppers) and fries for me,mozza sticks with Ranch dip and honey garlic wings for SWMBO. Two chocolate and caramel TimTams for dessert and paired with a bottle of Gran Passione Rosso.
Baked beans with air fryer all beef hotdogs .
Make that 12. Last (Wed) night was 2 more servings of cacciatore over the same WW rotini. And popcorn later watching MLB. Easy, simple, effective, and healthy.
Last night was whole wheat pasta with chicken and pesto sauce. Also ice cream. Also wine. (The ice cream and wine are constants).
Tonight, I’m thinking meatloaf and brussels sprouts (plus leftover mashed potatoes and corn on the cob).
Now I know what I’m going to make for the rest of the week Except I will gladly use my hot Hatch chilis, they help keep me from eating so fast
With the advent of cold/wet weather, got into cold-weather cooking mode earlier this week, made a large pot of potato/leek/bacon chowder - ate that for a few days, froze the rest, then made individual meatloafs last night, destined largely for the freeze 'em/quick & easy meals - heat it up, add a nice green salad & some sort of bread, and you’re good to go. No cooking tonight, Thursday is cereal night (both too tired to cook come Thursday!), but have some good pork from the next-door neighbors that will go into that pork & green chili stew tomorrow
My gf just texted me about tonight’s dinner. She pointed out that she’s been very busy with work (true), that I’ve been cooking most of our meals lately (also true), and that I should get a break from cooking dinner (totally agree).
I thought this would end with her telling me what she was making for dinner, but noooo, turns out I’m picking up take-out sushi.
All this talk about sushi in this thread and others has me considering picking some up, too. Hmmm…
I have loved that concoction in a couple of different restaurants, but I’ve never hunted down a recipe for it, nor tried to make it myself. Now you’ve got me jonesing bad since I can’t readily get back to the towns where I’ve had it.
Do you have a favored recipe or recommendation? I can Google as well as the next guy, and am pretty good at eyeballing good from bad recipes.
But first-hand recommendations from pros like yourself beat my guesswork hands down.
I thought you were going with that hoary the old saw:
He: Hi Honey, I’m home! What’re you making for dinner?
She: Reservations.
I’m no pro, but we used this recipe which was very good:
We finally ate the last of it last night. This isn’t your normal chili verde, which often has tomatillos, but it seems that recipes are all over the place for ingredients.
Interesting. I’ve never seen it made with any potatoes. But that recipe looks like an excellent start. Thank you!
It made it more of a stew by adding more bulk, and was very good.
Also, if you use that recipe, the cook time for the pork is ridiculously off. I cut the shoulder into larger chunks, of course, but still, an hour is not nearly long enough.
We had Indian spiced chickpeas on rice, with some cauliflower.
Harvested the last of the okra today, so we’re having gumbo with chicken and house made andouille sausage. Pretty damned tasty!
Just back from the gym and grocery store, so want something filling and easy. Fortunately, they were selling quality beef roasts for under one third the usual cost. Apparently the store has a lot - I wonder if they have been diverted from restaurant use due to low Covid customer volume?
So I brown all beef sides in peanut oil, salt, pepper, onion/garlic/chili powder in a metal pot while preheating the oven. Then add squash, carrots, sweet potato, onion and pepper to the pan and roast everything together. Not decided if I will deglaze the pan with a bit of wine and beef stock to make an easy sauce, or just load on the horseradish. The meal takes a while - since the temperature is moderate - but it is low fuss, very healthy and will last a few meals.
With the first frost last night, it’s time to say goodbye to a good chunk of the garden. Went out and harvested all the big green tomatos, so it’s fried green tomatos with our meatloaf tonight Will scour the shops for the last of the season’s okra this weekend, to put up okra & tomato dressing to keep me going through the winter. Can it be summertime now?
