Saw a YouTube video for making Chicken Fricassee. Looked good, albeit reminiscent of a recipe from the 1950s. Made it, served on garlic smashed potatoes last night, and it was very tasty.
High 70s and sunny here this afternoon, so a nice ribeye is resting in marinade. I’ve cleaned all the spiders out of the grill and there is a full bottle of propane. Also have a decent sized spud, but I’ll probably save that for dinner later this week and just gorge on steak tonight.

Our “easter dinner” was a boneless turkey breast on the grill served with stuffing, cranberry sauce, and air fryer Brussel sprouts. It was delicious.
I’ve got a pot of split-pea and ham soup going with some leftover ham from Easter dinner.
My gf made up a recipe that ended up like chicken fajitas but without tortillas cause carbs.
I’ve been getting these keto tortilla wraps from the local Kroger. 4 net carbs per. They’re surprisingly not terrible for a pseudo-flour tortilla wrap. At the very least, they serve as a decent matrix for holding stuff together.
Hah! I wish. My gf is seriously low carbing. The only wraps we have right now are egg-white wraps. Zero carbs. I dream of eating a bowl of freaking rice. That Ole tortilla looks delicious.
Wow, in my most serious keto days a few years ago I still did around 40-60 grams of carbs a day I believe, and I lost about 30 lbs. Is a near zero carb diet even healthy? If I remember my keto science, the brain needs a few carbs for proper functioning because it doesn’t really do ketones.
Anyway, the Ole wraps are not so much ‘delicious’ as they are a reliably sturdy lo-carb framework for meat, cheese and vegetable delivery. I tried the egg white wraps, but if I recall correctly, they were as flimsy as wet tissue paper.
Heh, my gf is unable to roll the egg white wraps, but maybe from rolling joints, I have the necessary dexterity.
I initially agreed to go along with her on the low carb thing, because I thought it would be for a week, two at the most. She, however, is using this to move toward overall better nutrition, which I’m not really into.
She wanted to drop 3 pounds (she was 3 over her ideal weight). I don’t mind being overweight, I was along for the ride. She lost her 3 pounds the first week of the diet. I have lost weight but I don’t do scales.
Baked chicken, string beans, scalloped potatoes and a soft roll, with cold (not ice) water. Later, three small homemade lemon tarts with powdered sugar, and a glass of milk.

Very small amounts of very expensive sushi. It was good, but I’d have preferred larger amounts of less expensive sushi.
T-Bone Steaks grilled rare with chimichurri sauce. A new twist, made the chimichurri with foraged garlic mustard weed (Alliaria petiolata)
I prefer steaks without bone to deal with (NY Strip, filet mignon) but the cool thing about T-Bones is allowing the dogs to nibble the last bit of meat off of the bone while we hold the bone.
How was the garlic mustard chimichurri? We get a ton of garlic mustard on our property, and I’ve wanted to try foraging some, but I guess I’m afraid of accidentally picking some poison ivy or something along with it (though it’s easily identifiable).
I loved it. My gf was underwhelmed, as she prefers a very heavy garlic taste in her chimichurri. Seasonally it was perfect timing, the weed is all young and succulent.
Chowing down on some refried beans doctored up with green onion and sour cream, and will probably have a slice or two of ham before crashing out for the night.
