Grilled salmon with horseradish aioli (delicious), baked sweet potatoes (meh), green beans with butter (fine), along with a Captain Jack pilsner and some ice water. For afters, cherry ice cream with chocolate sauce.
Tuna, habanero, mango ceviche. Hot tea to drink. Stewed then chilled strawberry/rhubarb over angel food cake for dessert.
Went out for Thai food. Neau Nam Tok (steak salad): Strip loin steak, rice powder, onion, and mint tossed in a lime juice vinaigrette, served with greens.
Sunday night I made spaghetti carbonara. One thing about carbonara – when it’s fresh it’s got a rich, creamy texture. But I had the leftovers for lunch today, and leftover spaghetti carobnara just solidifies into a big lump. It still tasted good enough, but the texture wasn’t the same.
Pork BBQ half slab, creamy coleslaw and baked beans, with a cup of ice water. Later, one scoop of coffee ice cream and one scoop of Key Lime Pie.
Szechuan beef stir-fry, plus for variety, a chicken one consisting of spicy Buffalo chicken strips stir-fried in garlic butter with mushrooms, green pepper, onion, and a bit of teriyaki sauce, garnished with fresh chopped scallions. All served over white rice.
The szechuan beef was made at my friendly local grocery – never had it before but it looks and smells nice. The chicken one was an impromptu invention late one night at Le Maison Wolfpup when we had a sudden hankering for a stir-fry, and it turned out most yummy! Looking forward to dinner – will definitely be lots of leftovers.

Breakfast for dinner! Bacon and pancakes (including one with raspberries from our backyard garden, and another with dark chocolate mini-morsels) with butter and real Vermont maple syrup, and a glass of OJ.
Last night I made Spaghetti Chicken, using my MIL’s recipe as a backbone.
This was one of the common meals my MIL made for my gf and her brothers growing up. Diced up chicken, cream of celery soup, pasta, chicken broth, red bell pepper diced, pimientos, various shredded cheeses, etc. all baked in the oven. Comfort food.

One of the funny things about Spaghetti Chicken is that my gf’s family calls it Spaghetti Chicken, but a Google search shows that everyone else in the world calls it Chicken Spaghetti.
I’ve been on a fish and chips kick lately, partly because it’s so easy to make with good quality frozen breaded haddock. By “good quality” I mean haddock that doesn’t have a fishy smell/taste, which some mass-market frozen fish do.
I just line a baking sheet with parchment, put the appropriate number of haddock pieces into a 450° oven for 15 minutes, then carefully flip (haddock can be fragile) and put back in oven with so-called 5-minute fries for 10 more minutes. Nothing could be easier!
Served with tartar sauce and malt vinegar, and I have the makings of a Caesar salad tonight if I feel like adding something healthier.
Flank steak salad, garlic bread, and bread pudding with whisky sauce.
I’m looking at two beautiful swordfish steaks that my gf has had in a marinade the past few hours. She wants me to grill them so I guess I will.

Grilled some turkey breast cutlets marinated in ginger/chili pepper marinade (Albuquerque Turkey) which I served with a side of pasta.
Went to an Independence Day BBQ at a friend’s house, and had a single pork BBQ rib, a hot dog in a bun with ketchup, baked beans and green beans, with a Heineken. Later, had a hunk o’ watermelon, and a bowl of homemade vanilla ice cream with fresh raspberries from our backyard garden.
I took apart a rotisserie chicken today so tonight’s dinner was a big chicken salad sandwich and a bowl of Rainier cherries.
