Dinner out last night: spicy shrimp tacos and french fries, ketchup, Corona beer, ice water. Later, a slice of Key Lime cake (not pie), which was good but not remotely tart enough.
Thanks to the crab cake thread, I’ve been thinking about different approaches. Last night I made Zucchini, Corn, and Krab Fritters.
I shredded some zucchini and salted it to get out moisture. Then rinsed and wring it out. I steamed an ear of corn, then charred it on the grill. Minced Krab and dusted it with Old Bay.
I combined the zucchini, corn, and Krab with egg, breadcrumbs, flour, seasonings. Put parchment paper in the air fryer basket and cooked my fritters!
I was in the area of one of my favourite food stores today and picked up a bag of their excellent cooked black tiger shrimp for shrimp cocktail. But instead of the usual jumbo ones, in the spirit of “what the hell, live a little” I got a bag of the extra large super-jumbo ones. It’s almost twice as much as the regular ones, but they are huge! They don’t usually have very many of those and are sometimes sold out. Looking forward to having them with my specialty dipping sauce – ketchup, hot horseradish, and most importantly, well blended with Lao Gan Ma szechuan chili crisp. There is a bottle of fine New Zealand Oyster Bay chardonnay in the fridge to go with it.
The black tiger shrimp was superb with my special sauce, as usual. The extra-large ones were a nice touch. Enough left in the bag for at least two or three more appetizer servings.
Tonight, dinner could be one of my old favourites from the same store, roast chicken breast stuffed with spinach and garlic sausage with a large side of Fettuccine Alfredo. But although I used to find that a big and filling dinner, it’s getting to be just way too much food. So I’m splitting it up. Tonight, stuffed chicken breast with oven fries and a sprig of broccoli, both chicken and broccoli with a touch of melted garlic butter. Tomorrow, the Fettuccine Alfredo with lots of fresh-grated Parmesan and another bottle of local Ontario “Foreign Affair” Conspiracy blend of Cabernet Franc and Merlot.
Tonight we are very unmotivated. Luckily I made a gigantic batch of Moroccan spiced red lentil soup with chickpeas and tomatoes a few days ago, thinking I would take half of it to a recently arrived Syrian family we have been helping get settled in (they just had a baby a week or so ago AND they moved over the weekend). But we missed connections because they didn’t have internet set up at the new place yet. So tonight’s dinner (with probably a reprise for lunnch tomorrow) is Moroccan lentil soup plus pita topped with ajvar, ham, and cheese and stuck in the toaster oven. It holds body and soul together AND it uses up leftover before we leave town this weekend.
Dinner for breakfast this morning. Found a pristine puffball mushroom when I was walking around at sunrise. Diced it up, sautéed it with onions and diced potatoes, then added some beaten eggs.
Vietnamese chicken salad with chicken, cucumber, zucchini “noodles”, and nuoc cham dressing. Forgot to pick up holy basil, but I’ll grab some today and add it to the prodigious leftovers.
I’m thawing the rest of the giant black tiger shrimp, to be had with the previously mentioned magical cocktail sauce and a few glasses of Oyster Bay Chardonnay. I can’t believe how huge those things are! I can’t fit more than six on a plate. To be followed by Thai spring rolls, with a blend of plum sauce and Chinese chili crisp as the dipping sauce. Yes, I love having what are basically hors d’oeuvres for dinner!
The thread about fish recipes a few days ago made me want fish, so tonight I made my go-to salmon recipe. Salmon seasoned with kosher salt, fresh cracked pepper, dill, and topped with some lemon slices (not pictured), and grilled on a cedar plank. And some steamed green beans tossed with salt and olive oil. Asparagus is my usual vegetable to go with salmon, but I had half a bag of fresh green beans that needed to be used up. And an inexpensive sauvignon blanc from the Russian River Valley by way of Trader Joe’s. To be perfectly honest I probably overcooked the salmon a bit; it was a tad dry.
Tonight will be blackened tuna steaks with mango salsa. Pictures to follow.
The last of the pork shoulder I made a while ago, roasted potatoes and carrots, cucumber, feta and tomato salad. Homemade strawberry sorbet for dessert.
