What's For Dinner Tonight: Episode 2021 – A New Hope

Last night was a repeat of the previous night’s menu of beef vegetable soup and apple sauce. I also have lunches for today and tomorrow. Dogfish head 90 minute to drink.

I have some Dumb Soup nukulatin’ - chicken broth with finely minced carrot and a bit of celery, plus mini farfalle and some couscous, and garlic.
A dash of Maggi and a hit of powdered poultry seasoning. Shortly, some shredded chicken and chopped green onions will go in.

I have a bunch of stale bread (I love to soak big chunks of it in soup) plus “real” croutons.

Already smells good!

Snacking on Triscuits with random toppings (cheese, butter w/chili crisp are current faves) as an appetizer.

Humor in the Dining room.

The past month I’ve been making meals using eggplant very often. For some reason this was a banner year for eggplant and when I see nice ones at the farm market I can’t help myself.

Last week when I told my gf I’d make dinner she actually said, “great, but no eggplant, please”.

So last night she took the reins and was working in the kitchen. I wasn’t paying attention. When she told me dinner was ready I was surprised to see that she had made Szechuan Eggplant. It was delicious and she cracked up at my surprise.

Last night was fun. I made Jerk Shrimp on the grill with sweet peppers as a side. My jerk seasoning is one suggested to me by a Caribbean chef we know. I order it from Amazon.

A tablespoon of the seasoning was enough to season 1 1/2 pounds of shrimp. I let it sit overnight, then grilled it quickly.

I also made a black bean and mango salad with corn, poblanos, a tiny bit of habanero, cilantro, onion, olive oil, lime juice, cumin, lime zest, etc.

The jerk shrimp was spicy, so I cooled things down a bit with leftover plum chutney I made a few weeks ago. Vodka and lemon juice to drink.

Baked salmon fillets seasoned with garlic butter, and green beans drizzled with a bit of olive oil and garlic and roasted until charred. And an IPA.

Mmmm, that is a good looking stroganoff.

Tonight will be chicken fried pork chops with potatoes roasted in rosemary an thyme on the side.

Oven-roasted breaded pork schnitzel, mini-potatoes tossed in olive oil and Herbes de Provence and roasted in the air fryer, Bush’s homestyle beans simmered with sauteed onion and barbecue sauce. I was actually looking for my much-loved jerk pork chops but they didn’t have any, but had tons of store-made pork schnitzel.

I might saute some brown mushrooms, too – I like the combo of roast potatoes and mushrooms tossed together. This will be my first time roasting raw potatoes from scratch in the new air fryer – hope it turns out well!

Burger and fries last night.

Friday night we had Lamb Vindaloo from our friend’s Indian Food truck. When he was closing up he brought us in an order of palak paneer which someone had ordered, paid for, then never returned (he said it happens occasionally due to drunk patrons).

Last night we were exhausted from the agility trial we attended. On our way home my gf stopped and bought a rotisserie chicken. I figured we were having chicken. Nope!

I was tasked with picking apart the chicken while she made some chicken soup. Added the meat, then the leftover Jasmine rice, then just before serving the spinach/cheese. Excellent meal, but no idea what to call it.

A Swiss cheese and bacon spread on Triscuits, along with some sour cream and cheddar Pringles, and a few slices of pepperoni, with a glass of ice water. Later, a piece of homemade vanilla cake and some Ben & Jerry’s chocolate ice cream.

I made biscuits and chicken gravy the other day. Got one biscuit left over. Gonna make breakfast for dinner, biscuit sammich with egg, cheese, and ham.

Tonight was Taco Tuesday, one day late.

Multiple courses last night. First a sliced Honey Crisp apple with Borganzola cheese (a blend of Gorgonzola and Bleau), then a small serving of bubaganoush (team eggplant), then tuna/mango ceviche over a bed of mixed greens. Vodka and lemon juice to drink.

Fried cabbage. Loaded with chopped bacon, onions and summer sausage then laced with Spanish smoked paprika.

Delicious!

The weather’s been chilly lately so tonight was Chile Colorado with some small flour tortillas, blackberries and a Spanish tempranillo.

I’d planned on black cod, but the electricity is out. So snacking on whatever’s handy.

Crockpot kielbasa, carrots, potatoes, etc.

Banana bread for dessert.
