What's For Dinner Tonight: Episode 2021 – A New Hope

You have my sympathies, I just got over my second case.

I dunno if it will help, but it sure can’t hurt. Rogan Josh is amazing, the spicier the better! I’ve never made it myself, though.

Last night was fish and chips for me and Szechuan fried rice with shrimp for my husband. The fried rice was a special at the restaurant we went to; he’s hoping it will end up in regular rotation there.

I’ll be making General Tso’s chicken tonight.

Jerked Boneless Chicken Breasts served with air fryer brussel sprouts/carrot/garlic with a balsamic reduction. I made cranberry applesauce as a side, which was delicious.

I tweaked my brussel sprout air fryer recipe by quartering them and lightly parboiling them first. I also picked out all the loose leaves and added them to the brussel sprouts/carrots when there were 4 minutes left, along wit the slivered garlic.

Sauvignon blanc to drink.

Last night was interesting. My gf had taken turkey kabob meat out of the freezer to thaw. Ordinarily I’d use the kabob chunks to make shish kabob on the grill with peppers, onions, pineapple, etc. But the weather was shite and I did not want to grill.

So, I sliced the meat, red bell pepper and onion thinly. Minced some ginger root and garlic. Made up a sauce of soy sauce, sugar, and cornstarch. Then I made my take on Pepper Steak Stir Fry. Over rice it would have been a 9.5/10, but we are watching carbs. It was a solid 8.

Lemon juice and vodka to drink.

Too Fridayed to cook, so I heated up some precooked hamburger, dumped it over a bowl of about-to-be-iffy shredded lettuce, hit it with the usual condiments and had a hamburger salad.

Now I’m sipping a celebratory Manhattan made with Wild Turkey 101 Rye, Dolin sweet vermouth and Angostura bitters.

I made scallops Florentine the other day and today we ate the last of it along with some leftover spinach souffle (because you can never have too much spinach), focaccia and kiwi fruit on the side.

Need to think of something to have next week, as it will be a cold weather week. Lots of my cold weather involves beef - I want to think of something that will work that doesn’t use it.

Leaving for vacation tomorrow early morning. As per our tradition we are staying at La Quinta by the airport and will be enjoying dinner at Primanti’s. I’ll be getting my favorite, the capicola and egg sandwich.

Right there with ya. We heated up a half block of Velveeta with a can of hatch chile Ro-tel, scooped it up with chips and called it dinner. Leftovers may be lunch tomorrow. If not, we’ll eat it over the next few days while the weather turns nasty.

Snack-y dinner:

  • Triscuits, with sliced cheese (I found butterkase locally, yum!) or with butter and dabs of gochujang sauce
  • Egg drop soup, dolled up with some freshly sliced green onions
  • Slices of Granny Smith with peanut butter, and occasionally, more cheese

There’ll no doubt be a hot cuppa tea on hand soon, too.


First night in Sint Maarten, as is our custom we had dinner at The Palms with the owners Jo and Gregg. Jo is French Canadian, Gregg Trinidadian and both are foodies.

Gregg made me a whole snapper, Trinidad style. It was amazing. Jo did our cocktails. She started us with rum punch, then bourbon sours. After dinner we all sipped Amaretto.

(A Chinese couple seated nearby pointed out that skipping eating the eyes was a big mistake on my part. Had they mentioned this before the plate was gone I would have tried them (bourbon spurs will do that).

ETA: we have been fans of The Palms since they opened years ago. Back then we would just stop and eat. Now you need reservations, which we’d made weeks ago via Facebook

I’m making cheesy chicken quesadillas this afternoon. Its cold and I am craving spice so the hottest salsa I have will be a blessing.

Finally have my appetite back after my 1st Covid + Paxlovid. Roast leg-o-lamb and potatoes. Haven’t decided on sauce yet.

Tonight my sweetie is making Italian style pork roast and polenta with Parmesan cheese. Another perfect meal for a cold weekend. The worst part of this is being tortured by the smell of it cooking for hours before you get to eat it.

Waited too long to start the lamb roast, so it’s grilled cheese sandwiches with tomato soup instead.

Dinner at Yvette’s in the Quater de Orleans on the French side. We had Conchs Yvette (conch ceviche) as our appetizer. She had Conchs & Dumplings. I had a whole Snapper made Creole style. It was exquisite.

Accompaniments were fresh Johnny Cakes, plantains, and Rice&Peas. I mentioned I was happy having Rice&Peas on Sunday and our waiter laughed and asked if we were Jamaican. (Inside joke, many Jamaicans eat Rice&Peas with Sunday dinner and feel it’s a sacrilege to eat them any other day. Other Caribbeans think they’re goofy)

We were honored by a visit to our table by Felix, Yvette’s husband. Yvette died >15 years ago. Felix has to be in his 90s, but could pass for 65. Other diners who live on the island were looking at us wondering who we were and how we rated!

Crab cakes with roasted potatoes and carrots here. Green grapes and roasted tomato and onion focaccia.

I know the cold weather will be hitting here soon and I can’t make up my mind on what to make for it. I think a pot roast will be a good idea, and I’ll also make some hot and sour soup. Other than that I can’t decide.

Changed my mind again. I had red lentil pasta in garlicky marinara sauce, and a cup of hot chocolate.

Not dinner time yet, but my breakfast at Sint Maarten Yacht Club was outrageously fantastic. As always.
Eggs Norwegian (Benedict with smoked salmon) on the Dutch side. Perfect Hollandaise. Capers. Bloody Marys to drink.
