Last night was the chicken pot pie from The Pie Commission. Chicken pies are not normally my favourite but these guys make such great pies that I thought I should try it, and it did not disappoint. I had a hunch that fries would go well with it so I made some shoestring fries in the air fryer. It was indeed a good combo but resulted in too much food, so there is leftover chicken pot pie which I will nuke for lunch, with more fries.
Dinner will probably be another braised beef rib meat pie because I love good meat pies with buttery flaky pastry and I am in any case a creature of habit, and the oven is properly configured for it.
Tonight was another round of Singapore noodles. My sweetie wasn’t feeling well, so I got to do all of it under her supervision, at least as much as she’d let me do. It was delicious, we have leftovers, and the entire upper floor smells like curry powder.
I wanted to get more of those but apparently the fresh ravioli imported from Italy is on some kind of rotation. Apparently it’s like a “chef’s special”. All they had today in that department was shrimp and lobster stuffed ravioli. So I got that, along with a small container of rosé sauce. That will be dinner tonight.
Wasn’t hungry enough for a big batch of ravioli, so I just had tomato bisque and a tuna salad sandwich. Ravioli tonight!
I made my own tuna salad using a variation of an internet recipe and not knowing what I was doing, I messed up a few things, though it’s still OK. The basic ingredients in my modified recipe were solid albacore tuna, mayo, finely chopped red onion, finely chopped scallions, and a teaspoon of zesty dill sweet relish. I messed up by adding too much mayo and too little chopped scallion. Also, since the recipe called for some garlic cloves and salt and pepper, I just added a bit of garlic salt instead. No! The correct amount of salt or garlic salt required is zero! It will be much better next time.
Dinner tonight is comfort food! I’ve scrubbed (but not peeled) a baking potato and cut it into french fry pieces and it’s now soaking in water in the cold garage. Later on a “Pie Commission” brand chicken pot pie will bake in the oven. When the pie is almost ready, the potatoes will be drained, tossed in olive oil and garlic salt, and done in the air fryer for 16 minutes.
That’s more food than I can eat, but I’ve previously discovered that the chicken pot pie leftovers are terrific when nuked the next day!
Last night I grilled some beautiful steaks. I allowed the meat to cool, diced it and put it in baggies. Dog treats for Kizzy’s upcoming agility competition.
Then I grilled salmon filets.
As a side, instead of frozen riced cauliflower, I bought a big head. Chopped the cauliflower up, tossed it in olive oil, then roasted the heck out of it. Mashed the cauliflower a bit then added soy milk, some yogurt, and a bit of cream cheese. Took the stick blender to this while adding different spices. Worth the effort!
Tonight will be nice boring simple comfort food. Bush’s Homestyle baked beans with sauteed onion and smoky barbecue sauce, more french fries in the air fryer from the rest of the baking potato already pre-tossed in olive oil, and some pork sausage.
Supposed to be lobster rolls and mango pudding, in honor of the Mrs.’ birthday, but she’s been under the weather since we got back from a week in Belize (and I thought it made me sick having to come home!). So probably oatmeal for the Mrs., and freezer scrapings for me.
I am officially on Spring Break, so dinner tonight is indulgent. I had an excellent (and huge) breakfast burrito from the place down the street (egg, cheese, bacon and rice) (off menu - I’ve convinced the morning crew to do a special for me. The regular #1 has potatoes.) So dinner tonight is a batch of Ninja air-fried fries with habanero ketchup, Duke’s mayo and Sweet Baby Ray’s BBQ sauce as dipping stuff and one of my special 3:1 Manhattans. Soon to be followed by a Toad Suck Pond. Did I mention I’m on Spring Break?
Just for something different, a different meat pie from the purveyors of the very fine meat pies I’ve raved about before. This is a new one I haven’t had yet: beef’n’beer, consisting of lean ground beef, sauteed onion, beef stock, and a dark lager, ensconced within the superbly yummy buttery flaky pastry that I love them for. Sounds like pub food that would go well with beer, but I’m gonna have it with a nice cabernet. It might not be as heavenly as the braised beef rib pie, but who knows.
Well, now I know. Opinion: the braised beef rib pie sets such a high standard that it’s hard to beat. The beef’n’beer pie was fine, but not in the same league. My current faves are #1 the braised beef, and #2 the chicken pot pie as a close second. I initially had doubts about the chicken pot pie because I was used to the mass-market products, but these artisans make a delectable chicken pot pie.
Dunno what’s in store for tonight. If I manage to haul my ass out of the house I have a hankering for that fresh, rich rosé sauce I picked up the other day for ravioli, and have it with spaghettini and mushrooms.
