Since it’s Cinco de Mayo, I made chicken mole. The last time I made mole from scratch, it was really complicated – lots of toasting seeds, simmering dried chilis, etc. But that recipe ended up making way more sauce than I needed, so I put the leftover sauce in a mason jar in the freezer. So today all I had to do was thaw out the frozen sauce and simmer some chicken in it.
Pizza with prosciutto and arugula, and butterscotch pudding for dessert.
My gf roasted some potatoes, then combined them with monkfish and cod, and a cream sauce. Delicious. Sauvignon blanc to drink.
On the occasion of my son’s visit – he being famously a lover of junk food – we’re having pizza tonight. The local supermarket, the place whose deli makes such wonderful subs, also makes great fresh pizza. Alas, today they didn’t have the wonderful “deluxe” variation that I saw the other day that looked so good, but I picked up a pepperoni pizza heavily loaded with cheese and pepperoni. I just added thinly sliced brown mushrooms, green pepper, and red onion, and it’s now in the fridge awaiting dinner time.
Will be done tonight in the hot oven that the instructions call for, on parchment paper over a pizza stone, and then under the broiler for a couple of minutes. This stuff compares well with the product of some of the best pizzerias, and no comparison with some of the crappy mass-market pizzerias!
The child has also developed expensive tastes in wine, so we’re having some overly costly French Bordeaux with it. I’d personally have gone with some cheaper but still excellent Australian Shiraz-Cabernet. Still, if we intend to get plastered, we may have that, too!
I just can’t do salmon. I tried it once in a sandwich, I thought it was rare thin sliced roast beef until I bit into it. Couple of chews, spat it in the bin and said to the person who ordered the sandwiches WTF was that shit?
I can eat Barra (love Barramundi), Whiting and most white fish, Tuna but Salmon just tastes fkn horrible. Can’t do it.

I was looking for thicker cut pork chops, but couldn’t find any. I eventually found “ready to stuff” pork chops which were nice & thick, but had a pocket cut into them.
Sous vide 140 degrees Fahrenheit for 20 hours, then torch seared. Served with stewed then chilled rhubarb and air fryer quartered redskin potatoes. Vodka on ice to drink.
Saturday night I made Chana Masala and Gobi Manchurian. For my Manchurian sauce I used a pepper my friend (who has an Indian food truck) gave me. Oh my, it was hot, but a very balanced heat. Mmmmmm.
Sunday we put on a feast for Mother’s Day. Initially it was to be a brunch, but it evolved into a brunner (breakfast, lunch, dinner).
I made a fruit salad. Name a fruit and chances are it was in there. Also made a casserole with 14 eggs, turkey sausage and bacon, cheddar cheese, cubed potatoes, onions, various peppers. Mmmmmmmm
To drink I made mimosas. My gf bought 6 bottles of Prosecco. For seven adults, one of whom doesn’t drink alcohol. I was shocked we went through it all!
Tandoori lamb and vegetables, papadum, basmati rice.
Shredded turkey in gravy served over rigatoni noodles. We always have a few quart containers of shredded turkey in gravy in our freezer from the turkey farm. I served it with stewed then chilled rhubarb. I chop up a few stalks of rhubarb, add a tablespoon of water, and simmer. Toward the end I add a bit of sugar and cinnamon, and a splash of lemon juice. Man, I love rhubarb.
I served the rhubarb in chilled bowls and the turkey/pasta on heated plates. My gf hasn’t mentioned/noticed the care I’ve been taking in heating/chilling dishes, but I think it makes a difference.
I splurged a bit yesterday and bought some ground cow. If you like ground beef and have access to ground cow you should give it a try. They slaughter a steer and instead of butchering it to get roasts, steaks, etc, they just grind all the meat together. Delicious.
I made a stuffed meatloaf with my usual meatloaf recipe, then I gloved up and worked on parchment paper to make a flat rectangle. Laid out diced tomatoes, turkey bacon, basil leaves, and shredded cheese. Rolled it up and made a nice Freeform loaf. Added a tomato sauce glaze partway through the cooking process. Put yams in the oven along with the loaf.
Cabernet Sauvignon to drink.
Pastrami, Swiss and lettuce on marble rye with horseradish and cranberry mustard.
Baked breaded cod (okay, fish sticks) with blueberry vinegar, and a white wine spritzer.
Hamburger salad, which we have a few times every month.
For dessert: Rhubarb!! The past few weeks I’ve been making rhubarb most nights. I do this every May. Eventually my gf will say something, but she’s currently still cool.
I chop up and simmer the vegetable with a tablespoon of water. Later I add just a bit of sugar and a splash of lemon juice. When it’s done cooking it goes into the refrigerator to chill.
I’m a big fan of prepared convenience foods. Ever the fan of the yummy subs from my local supermarket, yesterday I picked up a roast beef and a turkey sub and a crispy chicken sandwich with lettuce and tomato. I had to go out again today because I forgot to get salad dressing and got another roast beef sub and another chicken sandwich. The sandwich turns out great with the chicken in the air fryer for a few minutes while the bun toasts on a crepe pan, then everything assembled and the chicken smothered with mayo.
I was in a bit of a hurry yesterday but this morning was more leisurely and I noticed that once again the President’s Choice store brand has a new line of products – frozen Asian soups. This is great because PC products are usually really good quality. There were at least half a dozen or more varieties, including chicken won ton, chicken pho, vegetable tom yum, chicken khao soi, and others.
Today lunch will be Cobb salad with New Zealand Chardonnay and dinner will be a crispy chicken sandwich with won ton soup and more Chardonnay.
Semi-lazy dinner tonight: Whole wheat pasta with Rao’s alfredo sauce and some rotisserie chicken that was left over from another meal. I dropped a handful of green beans into the pasta water during the last half of cooking, drained the lot and then added the sauce and chicken. Served with some focaccia that I made yesterday and a green salad.
Last nights dinner began with Camembert cheese and wine by the pond, then grilled swordfish and riced cauliflower. A side of rhubarb.
Buttermilk-marinated chicken-fried steak, country gravy, mashed taters, green beans from the garden of last summer, and a basic greens salad.
Went to the Greek Festival last night - gyros, spanakopita, Greek salad and a nice light white Greek wine. All very good. The pastry table was already sold out or we would have gotten some of those, too.
I predict later this week my gf will put a stop to my rhubarb craziness.
