What's For Dinner Tonight: Episode 2021 – A New Hope

No faux wine?

We got Chinese take-out last night. General Tso’s for the mister, and Shrimp w/ vegetables in a spicy brown sauce for me.

My daughter and I shared a blue cheese burger and squash-filled ravioli in a butter sage sauce.

It’s been chilly and rainy all day, so tonight is beef bourguignon and rumbledethumps.

I want Chinese take-out for dinner. What I will probably end up having is nuked frozen vegetables with some cooked hamburger mixed in. This town has shitty options for Chinese any more.

For eating for the week I made up a pot of bacon/burger/beer/cheese soup, using a few different cheddars from the Murray’s cheese aisle at my local Fred Meyer. A pox on Kroger’s for putting that Murray’s supply in, now a not-insignifigant portion of my grocery budget gets blown there

I wanna come eat soup with you!!! Most of the soups I make are vegetable types, but I do have a good chili recipe and a pseudo chowder type with potato, corn, and onion.

It’s a fairly simple recipe, and comes together in about an hour.

Last night we had food from Pittsburgh Tortas, one of our favorites. We always get the same thing, one fried eggplant torta and one verde chicken torta. We then trade a half for a half. We also get his fried potatoes (bravas)

Last night was cool. We showed up at the brewery and told the food truck guy I’d be out to order once we got settled in. He knows our usual and went ahead and made our food. When I went out to order, he was putting our meal together.

Fried Eggplant - cornmeal breaded eggplant + cotija cheese + cilantro lime slaw + tomato + red pepper mayo

Verde Chicken- grilled chicken + tomatillo sauce + smashed black beans + melted chihuahua cheese + lime cilantro slaw + pickled onions + poblano crema

#3 Combo plate (2 cheese enchiladas, beans and rice) from the Mexican drive-thru down the block. Washed down with my weekly Coke.

Danced and drank and drank some more at a Ska Concert. Dinner was a fried catfish po’ boy. It was a meal! On a hoagie bun, three nice breaded and fried filets, remoulade sauce, tomatoes, cheese. Who knows what else.

Hurricanes for dessert. My last hurricane was at Pat O’Brien’s. These were comparable. (We had a designated driver, a dry alcoholic friend). Worth his weight in gold, he is. Although he is staying the night and expects steak&eggs for breakfast. Because my gf promised it. Now im defrosting a steak and planning how to trisect it.

Amaretto nightcaps.

Pat O’Brien’s was the only time in my life I’ve ever had one. That was in … 1982, I think. Before the drinking age was raised to 21 nationally.

Stuffed salmon tonight with rumbledethumps, focaccia and clementines.

I got some peppermint bark when I went grocery shopping and have been having a little bit of that for dessert for the last few days. That stuff is seriously good. I might need to grab a couple more bags before it goes away. I also need to go over to WalMart and get a pint of eggnog - they’re the only place that sells it in that small a container.

Had to look that up. I live colcannon, which sounds similar.

I don’t (or at least, I didn’t) know what “bulgogi” was, but apparently I’m going to have some. Always on the lookout for something new, I picked up a pack of Korean beef bulgogi (they also had pork) which is defined as “a Korean dish made of thinly-sliced beef marinated in soy sauce, sugar, sesame oil, garlic, ginger and pear. Bulgogi can also be made with chicken or pork.” This one has onions and sesame seeds, too.

It’s frozen, but the instructions call for fully thawing and then stir-frying, which sounds like they want it prepared authentically and presents an opportunity to add other things like mushrooms and bell peppers. It should work well over rice with fresh scallions, soy sauce, and possibly chili garlic sauce

Bulgogi is delicious!

Last night was Greek stuffed peppers and stuffed tomatoes. Dessert was going to be a carrot cake, but my b-i-l substituted grated golden beets in place of the carrots. It was great!

I make colcannon with kale instead of cabbage, but it is quite similar.

Yep, even bad bulgogi is pretty damn good. I like to grill the pre-prepared stuff, but stir-frying should work out just fine.

Tonight was bangers and mash.

Last night my gf prepared Baked Cod on a bed of Potatoes in a cream sauce. Sierra Nevada Pale Ale to drink.

Last night I made green chili pork stew. It was delicious - but I forgot the tomatillos! I need to read a recipe now and then, to update my faulty memory for the ingredients list.

Damn, every time I get hungry nowadays it manifests itself as a craving for cabbage rolls in tomato sauce stuffed with beef and rice. I think I’m addicted! Despite spending over $160 yesterday on groceries for a household of one (1), I guess I’m off tomorrow to my favourite little deli. Man, would I be pissed if they don’t have cabbage rolls!
