Tonight was a very lazy dinner of takeout Banh Mi. It was delicious as always. Next time I have to ask for more hot peppers, though.
The full menu for tonight’s dinner is now set. All basically simple, but good. The supermarket where I got this stuff often has a terrific Forest Mushroom soup in their hot soup station, but not this time. No problem, all their soups are also available chilled. So we’re starting off with Forest Mushroom soup and Caesar salad, then the stuffed chicken breasts and Fettuccine Alfredo. For desert, a choice of yogurt flavours – peach, blueberry, or vanilla.
Then on to movie night. We’ll probably watch The Brutalist (3½ hours!) and maybe re-watch The Substance if there’s time. Movie snack will be tortilla chips with “Mad Mexican” roasted tomatillo & avocado dip (provided there’s any left – I’m dipping into it and it’s addictive!).
Followed by a lesson in lexicography. I wish to provide my guests with a pleasant after-dinner treat, not take them to a parched waterless wasteland!
I had a carne asada torta which contained steak, refried beans, lettuce, tomato, guacamole, and red hot sauce.
It was a “grab something and eat it” night here.I had a pastrami and mustard sandwich on whole wheat bread, with a microwave Superpretzel for dessert.
Brined pork rib chops, homemade mashed potatoes, and oven-fried brussels sprouts.
Homemade honey mustard dressing: Wildflower honey, stone ground mustard, cider vinegar, shot of my preferred hot sauce.
Chicken thighs marinated in such for 30 minutes, with plenty set aside.
Air fryer for 16 minutes at 400, sliced.
Roasted Anaheim chiles blistered in same air-fryer (less time though), skinned, seeded, and coarsely chopped.
Trader Joe’s bagged mixed green salad (yeah, I know, not best, but not the best time of year for fresh greens)
All of the above drizzled with reserved honey-mustard prior to wrapping.
Wrapped in just warmed for better flexibility flour tortillas.
Best of all, that was last night, with enough left over to do it all again tonight!
Dinner out tonight - blackened chicken sandwich, small hamburger with blue cheese, bacon and onion jam. Fries with both, one glass of beer and one glass of wine.
The bill was $50. It was all good, but not worth that much.
Lunch today was half of a roast beef sub. A late dinner will be the other half, with either a Caesar salad (healthy) or fries (not healthy). Meanwhile my pre-dinner appetizer is (of course) a large Caesar, well anointed with Worcestershire sauce and clamato rimmer.

Nice simple dinner tonight of steak & mushroom pie with fries. I’m not a beer drinker but this pub fare would have gone well with a mug of lager.
Fish tacos:
Specifically, cod with a spice rub of chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and grilled. Topped with cabbage, a little jalapeño, cilantro, and a sauce made from mayo, sour cream, lime juice, a little sriracha, garlic powder, and salt.
The supermarket that makes great fresh prepared meals (I’ve mentioned a few times the roast chicken breast stuffed with garlic sausage and a side of fettuccine alfredo) has added a lot of new items recently. I’m having one of the new ones tonight – roast beef with peppercorn gravy, mashed potatoes, sauteed onions, and green beans. To which I will add some sauteed mushrooms.
Looking at the size of this dinner, I suspect I’ll have half of it tonight and half tomorrow night! It was probably intended for two, but I am just one pup.
We went to HEB for groceries today, and we decided to grab some of their quite good barbecue. I had a sliced beef sandwich, my sweetie had a smoked turkey sandwich. Burnt ends for both of us, and she had peach cobbler for dessert. Delicious.
Leftover spicy Korean fried chicken and rice.
There was a piece of roast beef and some of the satueed onions left over from yesterday’s dinner, so I had an inspiration. Reheat the beef and onions, toast an onion bun, place beef on bun with a slice of cheese, then ketchup, onions, and a slice of tomato, and viola! A kind of cheeseburger, with fries on the side. Very yummy, and I must say, a creative use of leftovers! It could have used a sliced dill pickle.

And I forgot to post last night, and forgot to photograph it because I was too hungry and I ate it before the thought entered my mind, but last night was Caribbean jerk chicken, collard greens, and some frozen plantains from Trader Joe’s.
Tonight was tuna melt and cole slaw.
