From my perspective, more comfort food tonight: a sandwich on a freshly baked kaiser bun with Black Forest ham, salami, and bologna, Dijon mustard, sliced tomato, red onion, baby leaf lettuce, and mayo, with a bowl of leftover beans with hot dog bits from yesterday. Do not pity me, those making fancier dinners – I absolutely just live for sandwiches! ![]()
I made Polish pickle soup with the pickles I fermented last week, and then some simple rotini with a sausage meat sauce. I have some kimchi fermenting right now, so I think some kimchi jjigae is in the cards soon.
Last night was broccoli and beef from a Thai restaurant near a friend’s place. It was just okay. There’s a closer Thai place to me that has better food, so next time I’ll go there instead. Tonight, I’ll either forage here, or run out and grab some Chinese (probably more broccoli and beef).
Going simple tonight - one boneless skinless Red Bird Chicken breast (they were on sale! I had a coupon! Don’t beat me!) marinated in a mild hot sauce and herbs. Sliced into thin strips and topping a mixed green salad with a scratch made mustard/black pepper/cider vinegar/olive oil dressing. One small baked sweet potato as a side.
Zee wheight loss, it is stalling after a recent prescription change, and I need to be vigilant!
Tonight will be pulled pork, snap peas, and clementines with a sesame bun for my husband and a homemade biscuit for me. There’s a half bottle Australian cabernet left from a couple days ago, so we’ll drink the rest of that too. Apple pie for dessert.
Tonight was spinach-cheese ravioli in puttanesca sauce. Dessert was coconut cake.
Due to stopping off at two supermarkets today, I have both (a) a fine roast beef sub from the place that makes it best, and (b) a little container of sauteed mushroom and sauteed onion to layer onto the sub along with Dijon mustard.
Sadly, there was no clam chowder at the soup station today, though I regret not getting the cheese and broccoli soup. Oh, well, instead of soup there will be a big dessert of Chapman’s “Canadian Yukon Moose” French vanilla ice cream sandwich and pieces of clementine orange. I have no idea what the difference is between the Yukon Moose ice cream sandwiches and the regular ones except that the moose ones are slightly bigger. I guess I’ll find out. ![]()
I made lasagna yesterday because it’s only been 1,000 degrees here. Seriously, it’s been damn hot thank goodness for a/c. I was thinking about what I haven’t made in ages. It was delicious and we had leftovers tonight. I just served it with some good Italian bread. I forgot the salad, but there was so much anyway. We had a mousse for dessert which was nice since it was light after a heavy meal.
OMG, the roast beef sub with onions and mushrooms was incredibly yummy and so filling that I’m glad I didn’t get soup to go with it. There is still no verdict on the Yukon Moose ice cream sandwiches since instead of dessert the large roast beef sub created the need for a nice nap! ![]()
Tonight I didn’t have band practice, and I wanted pizza. So, I suggested we get a pizza from Cenzo’s, a nice local place. My sweetie agreed it sounded good, and they apparently do “deep dish” on Wednesdays. We never get takeout pizza on Wednesdays, so I decided to go for it.
Well, their idea of “deep dish” is actually square Sicilian style pizza. It was delicious, and we’ll probably go for it again if we order pizza on a Wednesday, but it wasn’t the Chicago style I was hoping for. I shoulda been tipped off by the relatively short time quoted (25 minutes). Oh well, it was even delicious cold when I decided to eat some extra later.
Tonight will be a cheesy Mexican chicken rice bowl with black beans, topped with chunky salsa, followed by a Yukon Moose ice cream sandwich.
I just took a quick picture of tonight’s Mexican rice bowl, and it seems that I didn’t hold my tablet steady so it’s really blurred, but to hell with it, not gonna do it again. This is my Mexican rice bowl prior to heating, after which all the cheese melts …
Ended up improvising tonight, since I was out and about most of the afternoon and evening. So I’m trying some new Lotus Millet and Brown Rice ramen (no saturated fat, and about half the calories) in a broth of water, dashi granules, and miso paste. Extra protein from a 6oz piece of pacific cod, and extra flavor from a bit of soy sauce, green onion, and two sliced jalapenos. Not as nice as greasy quick fry ramen, but I can have them a lot more often without the saturated fat.
Tonight will be grilled chicken souvlaki kabobs with Greek style rice with black olives and red onion, and tzatziki dipping sauce, with either Greek salad or a creamy coleslaw. No ice cream sandwich tonight as I have yogurt about to expire so having both blueberry and peach yogurt to use it up!
Tomorrow will probably just be soup and sandwiches. I just adore the semi-small sandwiches I concoct with Dempster’s Gold large hamburger buns, a few layers of Black Forest ham, salami, and bologna, Dijon mustard, vine tomatoes, red onion, baby leaf lettuce (romaine + iceberg hybrid), and Hellmann’s mayo. Yumm! For a larger sandwich, I use the same ingredients on a big onion bun.
Yes, I still love Montreal smoked meat sandwiches, but a pup needs at least a little variety!
Tonight I’m going to make a variant of the clear wrapper spring rolls I showed off upthread. This time I’m using rice vermicelli instead of mung bean (less chewy when biting through). I’ll be using butter lettuce leaves to roll the central strata, made with said noodles cooked, chilled and drained, and seasoned with garlic chili oil. To that I’m adding thinly sliced green onions, some ponzu marinated sliced Haas avocado, and a chiffonade of cilantro leaves). Shrimp will make the top layer again, cooked in shells in the skillet (briefly) and then peeled and brushed with soy-miso-ponzu sweet sauce.
All looks good, and I’ll probably eat too many. I’ve got most of the prep work done, so about to start on the noodles and then shrimp, but the actual rolls won’t be built until 5-6pm when the wife is ready to make her veggie dinner.
Tonight will be fresh tomato spaghetti with burrata, garlic bread, and a green salad. There’s a Sicilian white blend to drink.
Mmmmmm, homemade crunchy tacos are on the menu tonight. We’ve got the onions and serranos sliced up and will start making the meat shortly. Orange cheddar, lettuce, tomatoes, onions, guacamole and a nice tomatillo sauce from taco deli will be available for garnish.
I had turkey gizzard meatballs. Gizzards coated with flour and deep-fried, put into a food processor then formed into meatballs with some spices, chopped sauteed onions, garlic, oregano, salt, thyme, fried in vegetable oil. With some Sokusa Wild Shrimp Chips on the side, of course.

It’s peach season here in Oregon. They are ambrosial!
I always get carried away and buy too many. I’ve been eating them fresh at breakfast and made a cobbler to bring to a friend’s house as my contribution to lunch at her place last Saturday. Still too many!
Today I made a pie. So… peach pie for dinner. What could be nicer? ![]()
