What's For Dinner Tonight: Episode 2021 – A New Hope

Tonight was a chicken stir-fry over rice. Quick and easy.

Last night my sweetie made a ham, and milk bread rolls for the bread. I made fried squash as a side dish.

It’s probably been two decades since I last had fried squash. So, I ate too much of it. Little ham sandwiches on milk bread rolls today.

I watched this recipe on YouTube earlier this week, and thought 'hmm…". I make a lot of risotto, but usually a seafood risotto. And I make a lot of stuff with Italian sausage, usually pasta-based. But risotto and sausage together, I thought? Why, that’s like combining chocolate and peanut butter-- preposterous!

No, actually my reaction was “why didn’t I think of that before?!?” I had all the ingredients on hand, and it’s pretty simple for a weekday meal (not so much quick though, since the rice has to absorb the stock in its own time). It was pretty amazing. Even better the next day, since I just had the leftovers for lunch :face_savoring_food:

Tonight is beef tacos.

Lots of stuff for dinner tonight due to a recent grocery haul, but I seem to have developed an addiction to President’s Choice beer-battered haddock, so it will be fish & chips again tonight, with Legal Seafoods chipotle tartar sauce on one side of the plate, ordinary tartar sauce on the other (the chipotle stuff is rather spicy) and malt vinegar sprinkled on everything. After putting the fish on a baking sheet in the oven, I find myself sniffing my fingers in anticipation! :grin: That is a very tasty batter!

I’m having a “cheesesteak calzone”, according to the label. A prepared thing from the local grocery. It’s heating now.

Ixnay on the acotays tacos. My daughter, who was going to make them, isn’t feeling well, and I’m too lazy. Instead, I’m going to do a Stouffer’s stuffed green peppers frozen dinner. They’re not great, but if you cook them until the sauce starts to brown around the edges, they’re not too bad.

I’m doing something simple, an American style slightly overstuffed folded omelet (distinguished from an ethereal just barely cooked French one) with pepper jack cheese, sauteed onions and serrano peppers, served with flour tortillas and a side salad with mixed greens and a ginger-garlic-black pepper dressing I made last night.

That sounds delicious! A good American/diner omelet is one of my favorite dishes.

I had an early supper today that was something a little new. I had bought on a whim some chinese sausages that are shelf stable before opening. I also had a 1/2 cup (before cooking) of cooked barley in the refrigerator that needed to get eaten. So, I made “fried rice” with barley instead of rice.

Chopped and sautéed the sausage, added 1/2 a diced onion and continue cooking. Then tuened up the heat and added the barley, white pepper, and oil. I seasoned with a little bit of soy sauce and sriracha. Then, lastly, stirred in an egg.

It came out great! The sausages had that “chinese bbq pork” flavor, and the barley brought some built in depth of flavor that I would have needed actual technique to achieve with white rice.

Yesterday, yet again, I made oven-baked chorizo sausages on a bed of chopped white onion and pizza sauce, and had some with baked mac & cheese. I was intending to have just one sausage, but damn, they’re so good I had half of another. And then the other half!

Tonight I’ll chop up two of those sausages and add them to a pot of Bush’s Homestyle beans along with lots of the oven-sauteed onion/sauce mix and barbecue sauce, and simmer for about half an hour. Then serve with fries from the air fryer.

Finally had the beef tacos and they were very good. No tomatoes - just seasoned beef, onion, cilantro, and cheese.

Two nights ago was Honey Dijon Lea and Perrin’s Chicken Skillet over egg noodles. To make sure you use all of the magnificent sauce, you’ll really want to put it over egg noodles or perhaps rice.

It’s one of my favorite things to make, and qualifies as a Quick, Easy, and Awesome recipe.

I slow cooked a pork roast yesterday, so dinner tonight was pulled pork sandwiches and mac salad. Homemade Western North Carolina vinegar sauce. Not bad if I do say myself.

I was gifted a large piece of mediocre pepperoni pizza, but even mediocre pizza is decent pizza, and being gifted makes it even better.

Since my wife agreed to be my Valentine this year, we wanted to cook and eat a few meals together, which is normally a bit difficult since I’m very happy eating meat and she of course, isn’t.

So overnight I made slow cooker oats for us to have this morning (steel cut oats, dried apricots and dates, pecans and a bit of milk) as a delicious breakfast. Tonight we’re experimenting with some pan fried fusion wraps - bean curd wrappings around a filling of green chile and lime refritos, pepper jack cheese, and blistered/roasted jalapenos.

Along with, a vegetarian (not vegan still) hot and sour soup.

I’m looking forward to it, meat-free though it may be. :wink:

Well, I have had over 23 married years, plus several before we married wheedling her agreement to be my Valentine, but one should never take it for granted!

We actually will also go out for a nice fancy dinner date, or maybe just to our favorite local restaurant, but doing anything over this weekend means paying a massive premium in costs and crowding. :face_exhaling:

Though I’m solo these days, I thought I should have a treat for Galentine’s Day, all the same. So dinner tonight will be a bit decadent. Chicken Marsala over polenta with steamed spinach and a Caesar salad to start. Nothing really challenging to make, just all that cream. (!!!) I won’t want dessert.

Butternut squash soup (accented with sour cream & ginger/sesame “salad topper” things … and some croutons) and Triscuits with brie & apricot jam takeout duck sauce.
