What's For Dinner Tonight: Episode 2021 – A New Hope

Last night we went out to MesoMaya for dinner. I had the pollo con mole for the first time. My, that mole sauce was rich. It reminded me of Indian sauces, and it was fabulous. Served with a heaping mound of rice and a generous serving of fried plantains covered in crema mexicana and queso fresco. I’ll have to order it again sometime, when I can lure myself away from the serrano chicken enchiladas (which my sweetie gets almost every time) or the asada tostaditas (best. nachos. ever.)

Tonight, my sweetie made pinto beans with jalapenos, serranos onions and the last of the smoked brisket we froze at Christmas. I topped mine with chopped fresh jalapenos. Jalapeno and cheese cornbread was served as well, because she loves me. It was fabulously delicious.

I’m probably going to make myself some refried beans from them for breakfast (yes, and maybe for lunch and dinner), and eat them with tortillas or tortilla chips. I haven’t decided which form of tortilla yet, but homemade refried beans are the best refried beans.

Meanwhile, I’m off to pilfer a slice of cornbread.

So I did this recipe this weekend to have for lunches for the week. The only adjustment I made was adding a bag of spinach (I don’t know, maybe 4-5oz), quickly wilting it after I cooked the chicken.

The dish was/is really tasty, but, while I don’t know if I would call it “too rich”, it definitely is lacking balance. I do think it needs something a little tangy or vinegar-y to contrast the sweet/fat combination of blue cheese and caramalized onion. If I did it again I might add red wine vinegar, or radicchio, or even just a more fresh vegetable- lightly cooked green beans, for example.

That said, I’m looking forward to lunch today :slight_smile:

I’m trying a new recipe today. It’s slow-cooker pepper steak, but I don’t have high hopes for it. Its big attraction for me was that it won’t heat up the kitchen. In fact, that was my main criteria for everything on the menu this week.

I made a batch of beef stew in the Instant Pot yesterday, so that’s what will be for dinner for the next couple of nights, with homemade bread on the side. Sounds like a cold-weather meal, but we’ve had some terribly windy, cool days lately. So I thought, why not? It’s such an easy meal to make, and it’s done in less than an hour.

I had corned beef, cabbage, and colcannan mashed potatoes, with horseradish sauce on the side. I’ll have the leftovers tomorrow with cranberry mustard.

Last night i made spaghettini with Carbone™ brand pasta sauce. Like Rao’s, it’s based on the recipe of a renowned New York restaurant, but this was “marinara delicato”, made without garlic or onion. I have no problem with either, but I was intrigued by the ingredients, which included carrot, a classic way to counter acidity and imbue mellowness. I tasted the sauce and it was quite lovely. I tasted it again, and again, until I’d used up nearly a quarter of the jar!

I had some deli meatballs but decided to just have a plain marinara spaghetti. It was very nice but unfortunately I decided to have a short nap afterwards which lasted until the early morning.

I mixed the leftover spaghettini and sauce together and put them in the fridge. I trust I won’t get food poisoning – the house is reasonably cool. But if you never hear from me again, you’ll know why!

In my effort to not heat the kitchen this week, I put poke bowls on the menu. Wow! If I’d checked the price of tuna beforehand, I wouldn’t have. $30 a pound! Fortunately we’ve been eating a lot of leftovers lately so it evens out. It was very good, and we’re never having it again. :slight_smile:

Tonight will be the leftover spaghettini, but dressed up with mushrooms sauteed in garlic butter. And of course lots of genuine parmigiano reggiano.

I happen to have a bunch of fresh cremini mushrooms that I usually use for ramen, but since I have no pork or chicken on hand to add to ramen, I may as well use the mushrooms for spaghetti.

Pot pies and a side salad.

Tonight was McDonald’s, I was starving and beat. I had a QP and she had two little cheeseburgers. We were as happy as children.

There’s something about the McD’s basic little cheeseburger that’s oddly appealing. Sometimes if I’m feeling virtuous or not particularly hungry, I’ll order a Happy Meal with some silly toy inside, with or without maybe a second cheeseburger. As I’ve mentioned before, another big fan of the McD’s cheeseburger was my Bernese Mountain Dog. He’d chomp at it while I held it for him.

I worked at McDonalds for years, and still like their food, though I have to admit I never get it anymore. Did you hear they’re bringing back the deep-fried apple pies for a limited time? Those are made of crack! :face_savoring_food:

I’m once again way overdue for grocery shopping, so what better indulgence for dinner than my favourite Chinese takeout, and what better items than Pork Lo Mein and Singapore Noodles. As always, the containers are stuffed to the brim. I may still go shopping tomorrow. Or Sunday. Or Monday … :sleeping_face:

Tonight, I was beat again, so I grabbed a pizza from Cenzo’s (the Windomere, with deli pepperoni, cup+char pepperoni, bomb peppers and basil), and grabbed a delicious chicken Parmesan sandwich for my sweetie (only available on Thursday). The leftovers have us set for snacks tomorrow, at least.

Lots of leftover Pork Lo Mein and Singapore Noodle for tonight. Whoever made the Singapore Noodle wasn’t as generous with the shrimp as the last one, but that’s OK because there was lots of pork and chicken bits too and the usual onions and peppers, and the curry hotness was as delicious as always – augmented with Huy Fong chili garlic sauce! And the wonderful mellowness of the Pork Lo Mein was awesome as always!

Tonight is “some sort of fish”. I’m stopping at the store on my way home and getting about 10oz of whatever looks good. Probably baking it with a breadcrumb topping. Roasted potatoes and perhaps sauteed chard.

Vietnamese food: Phở-rench Dip Panini: Braised osso buco, provolone, demi-baguette, yellow onion, cilantro, cup of phở to dip, pickled papaya & jalapeño, radish. It was excellent!
