What's For Dinner Tonight: Episode 2021 – A New Hope

A simple but good one last night. Pan-seared ham steak, served with applesauce, brussels sprouts, and whomp biscuits.

Rice bowl last night, with black beans, a little cheddar cheese, toasted quinoa, and a whole mess of carrot tops and beet greens (the top half of carrots and beets from the farmers’ market this weekend) sauteed with garlic, with some basil and dill tossed in afterwards. It was fine, but the carrot tops were incredibly stringy and not that pleasant to eat/chew.

Having made the chorizo sausages late last night, in my usual fashion baked with chopped white onion and garlic pizza sauce, tonight’s dinner will involve minimal prep and minimal heat output – Bush’s Homestyle beans simmered with some of the sausage and the oven-sauteed onion and a touch of smoky BBQ sauce, and served with potato salad. Beans and potato salad is a simple but magical combo that has always been one of my fave comfort foods.

Tonight was trout sautéed in garlic butter plus olive oil, with lemon slices and garlic in the middle. It was delicious! The trout was caught 3 days ago and packed in ice until today.

Dinner tonight will be one of my faves – roast chicken breast stuffed with garlic sausage, with fries from the air fryer and turkey gravy. It’s part of a prepared dinner with fettuccine alfredo that I froze a couple of weeks ago.

The plentiful fettuccine will be reserved for tomorrow, along with some broccoli and garlic butter and lots of parmigiano reggiano on top!

Tonight is a reuben sandwich.

Man, I would eat that every night.
I made a Thai peanut curry recipe, hopefully using the kind of bagged veg that don’t make you shit your brains out.

It’s too bad they don’t put that on the packaging so you know.

Oh, there is not a much better meal than fresh-caught trout.

Reminds me of a story, if I may be indulged-- let’s call it “What was for dinner a couple Summers ago” :smirk:

A friend has a few acres of land in the woods outside of the town of Grayling, Michigan. We’ve been camping up there for years. I try to fish, but my fishing luck is not often very good.

One Summer we went into Grayling for supplies and decided to check out the fish hatchery in town that supplied the Au Sable River. Turned out they offered fresh trout right out of the hatchery pond, cleaned to order and ready to cook, so we bought a mess of it and took it back to camp. I lemoned, garlicked, buttered and grilled it. Outstanding feast!

A month or two later that Summer we were camping up there again, and decided to pick up some more trout. At the hatchery, the same few 20-somethings who worked at the place, and fixed us up with the trout before, were working there again. I asked the same guy “hey, can you hook us up again?”, thinking he’d remember us. He uneasily looked at his young co-workers and said, “uhhhh… maybe? What were you looking for?” When I replied “trout” they seemed visibly relieved. “Oh sure, how much you need?” I think they thought we were looking for meth or something…

Lol! What’s funny is that trout wasn’t even their first guess.

Well, to be fair to them, I suppose I could have been asking for one of several trout-related services-- they had a trout fishing pond, they sold and cleaned fresh trout, which is what we wanted, and they were a commercial hatchery, so for all they maybe knew we were looking to pick up a truckload of hatchlings or whatever.

It was just the way the one guy looked at the others uneasily when I said “can you hook us up again?” and cautiously replied “uhhhh…maybe” that made me kinda think they thought I was looking for meth, or pot, or something less legal than trout.

Agreed. I related earlier about cruising Georgian Bay one time with my friend and docking for dinner at a lakeside restaurant and enjoying the most wonderful pan-fried trout!

Meanwhile, dinner tonight will be a sort of indoor picnic. I only ate about half the chicken breast last night – it was big, and stuffed with sausage, so tonight will be half a cold stuffed chicken breast with potato salad. If I’m still hungry I guess I could pig out later on and have the fettuccine, too.

Someone gifted me some Jamaican spices. Whoooo! I’m going to have to find some cautious recipes to use this in.
