What's For Dinner Tonight: Episode 2021 – A New Hope

Tonight will be leftover pasta pomodoro.

I’m planning an ersatz carbonara with some feta and local cherry tomatoes tossed in. A nice chunk of baguette and a glass o’ wine.

I had some taco truck carne asada tacos.

Some salmon baked in the oven and a home made tabouleh (I had bought some bulgur wheat on a whim).

Tonight I have some chicken thighs marinating (yogurt and the spice blend I made this spring for chicken shawarma) so will have them with left-over tabouleh.

Last time I went grocery shopping they had this ‘point of sale’ display for flat-bottom taco shells, which I had seen advertised on TV, and I thought “hey, let’s give those a try-- seems like a great innovation-- they can stand up on their own!” I was looking forward to a taco Tuesday.

Big disappointment. For one thing, once you start loading them up, they still tend to fall over.

But even worse, to support the flat-bottom structure, they are mouth-shreddingly thick. And, I don’t know if they were stale or it’s just a quality of them being so thick, but they weren’t satisfyingly crunchy-- they were sort of tough and chewy. My recommendation if you like making crunchy tacos at home? Invest in some of these taco holders:

I’m once again terribly delinquent in keeping up with grocery shopping, so foraging ever-deeper into the fridge. But the fridge still yields good things – tonight will be steak & mushroom pie with fries and gravy, the gravy coming from one of the many single-serving containers that I froze recently. It’s turkey gravy. Turkey gravy with a meat pie? Don’t judge. It’s delicious! That gravy is practically addicting! :face_savoring_food:

Tonight’s another carne asada torta because they’re delicious and relatively inexpensive, considering I get 2 or 3 meals out of it.

I made a powdered black bean soup, doctored up with minced garlic, kielbasa (HA! not so vegan now, are we? muah-hah-haaaaa!) a bit of red pepper, freeze-dried corn, and a small dollop of chicken demi-glaze, cuz if I’m gonna eat instant soup, imma be bougie about it.

Also heating up the oven for one (1) beef bulgogi empanada, and one (1) crusty roll for the soup.

There’s chocolate ice cream in the freezer for later, should the needful be required.

Those all sound great! I’m intrigued with the bulgogi empañada in particular. There’s a Caribbean/South American place up the street with beef, cheese, chicken, spicy onion, or spinach empañadas, but a hole in the menu where beef bulgogi oughta be!

Ehrm, these are frozen in a box from Walmart. Nuthin’ that fancy.

Still sounds like it would hit the spot though!

Oh, they’re quite tasty. Stoopit simple to heat up - 15 min, flip halfway through.

Brand is “bettergoods” and these come in an obnoxiously bright magenta box. Can’t miss 'em.

Hehe, even then a kind of weird fusion cuisine for WalMart. Next time we make something like bulgogi, I may set some aside for empañada experiments.

Thx! I’ll look for them the next time I’m at Walmart. I rarely go there as it’s out of my area, but there are a few things worth getting if I’m in the neighborhood.

My grocery haul today included a lot of summer picnic type stuff because I was in that kind of mood and the weather sort of encouraged it, even though I’m not planning on any outdoor picnics. So, a big tub of potato salad, kielbassa, two kinds of liverwurst (plain and herbed), fresh bread for sandwiches, an assorted Italian sub, and of course Bush’s Homestyle beans to be simmered with sauteed onions and smoky BBQ sauce.

All of which will be doled out over the next week and beyond and interspersed with other stuff. Tonight will probably just be the assorted sub with some added Dijon mustard, and an ice cream sandwich.

The one yesterday was actually a noodle bowl – thick Shanghai noodles stir-fried with chicken, mushrooms, and baby bok choy in soy and oyster sauce. It was delicious and was basically a really nice chicken lo mein, and I’m definitely getting it again! Must not have had it before or I’d have remembered.

Tonight, a Buffalo chicken rice bowl with cherry tomatoes, bell peppers, and red and green onion, topped with two kinds of cheese. It’s pretty much the same as a Mexican rice bowl except for the way the chicken or beef is seasoned, so I treat it like one and add a few spoonfuls of chunky salsa on top. Makes all the difference!

Yesterday I ended up having a panini made with prosciutto, apples, and goat cheese on some kind of bread with marjoram on the outside. It was great! Not sure about tonight yet.

Fusion cuisine tonight as part of my monthly (or slightly more frequent) meatless dinner with the wife.

Egg roll wrappers, filled with green chile refritos, sliced jalapenos, colby jack cheese, rolled and pan fried. Served with some of my homemade peach/habanero hot sauce and equally homemade roasted hatch chile salsa.

Yesterday my dearest picked up some really thin pork shoulder steaks from HEB and marinated them in garlic, ginger, peppers and other spices, then had me grill them. We still had quick pickled daikon and carrots from the last time we made this, and she grabbed some mint and cilantro, and sliced a cucumber. For the dressing, she made a sauce from fish sauce, sugar, hot serranos and limes (might be more in there, but that’s what I remember).

So, we used all of the above with some small french bread loaves to make fake home made banh mis yesterday and today. I dressed mine further with some sliced ripe jalapenos from our garden and a little mayo. Deeee-liciousness on a bun. Now we’re out of anything near appropriate for bread, but we still have some meat. I may go grab a baugette and keep the sandwich fest going for at least another day tomorrow. We’ll probably freeze whatever I can’t scarf down.
