We’re thinking of making a trip to Chicago soon, I’m penciling in “dinner at SDT’s house”.
As the weekend approaches, we’re down to the stuff no one really wanted to eat. Last night, it was a slightly changed version of this recipe: Meat Loaf Pie Recipe
I keep trying to tweak it into something tasty, but it’s fatally flawed. I think it’s the pie crust.
Tonight, crock pot chili*, which I am making only half a batch of because no one will eat the leftovers.
*Actually, the husband and I have a devious plan to go out to dinner and stick the kids with the chili. Muahahaha!
Kraken is delicious and underrated.
Dinner tonight is black bean stew. Ingredients are black beans, celery, carrots, green peppers, cumin and OJ. Ridiculously simple, but the OJ really makes the black beans sing. Served over brown rice, green salad on the side.
Tonight will be Parmesan Chicken Tenders:
Cut boneless, skinless chicken thighs into tenders;
Season with S&P;
Dredge in egg wash and flour;
Dredge in a mixture of 50/50 seasoned bread crumbs and parm cheese;
Lightly pan fry in vegetable oil.
We’ll also be having Tater Tots (MMMMM, frozen, cafeteria-trash goodness!) and some stewed apples.
There will be BBQ sauce, honey mustard and ketchup for dipping.
Chicken breast, spinach and feta cheese wrapped in filo pastry and baked.
For the returning husband from Libya… grilled pork chop, saurkraut with apples and panchetta, mash potatoes, salad and ciabatta. (me vegetarian burger with all the other stuff)
Yay for hubby returning from Libya! Hope you enjoy your dinner. . .and your dessert!
Spaghetti and meaty meat sauce with Australian parmesan cheese, leftover from Thursday night.
Lunch was leftover African peanut soup.
I just made meatloaf:
1.5 pounds lean ground beef
1+ cup crushed cheezits
1 can of Italian spiced tomatoes, diced
1 cup of mixed Italian cheese
1 package onion soup mix
healthy dose of Tabasco, A1 and garlic salt
I’m hoping it tastes good. It sure smells good cooking.
Disregard that meatloaf recipe.

Tonight for my young sons and I, utter simplicity.
Three thick and juicy strip steaks, crusted in sea salt and ground pepper, grilled.
A ripe tomato, sliced with sea salt, black pepper and fresh basil strips.
Store bought box-o-scalloped potatoes.
Popsicles for dessert.
Tonight is burgers and steak fries, with side salad. Boring, but always tasty. I also made a quiche today for breakfasts this week. Smells yummy.
Meatloaf here tonight too. Except I left out the cheezits, tomatoes, cheese, onion soup mix, Tabasco, garlic salt, and A1. Mine has half/half ground beef and ground turkey, sauteed onions, torn pieces of bread, lots of Worcestershire sauce, an egg, squirt of ketchup, garlic powder, Lawry’s salt, pepper. Oh, and a squirt of seedy mustard just because I’m out of the box tonight!
Mashed spuds, gravy, green beans, and a glass of 2 Buck Chuck will complete the dining experience.

Heh. I know it’s happened to me.
I once read a cookbook/general housekeeping book by Peg Bracken, who has written a lot of such books. One thing she said about cooking dinner that stuck with me was (paraphrasing, I think) “Sometimes there’s not a single thing wrong with what you’ve fixed for dinner except that it’s no damned good!”
I remember one fateful night when I decided to add the leftover corn to my meatloaf. Ugh. Horrible. Inedible, really. For several years afterward, every time I’d make meatloaf, one of my kids would invariably say “Just don’t put corn in it, OK?”
IMO, if you never make a mis-step or turn out a bad meal, you’re not nearly adventurous enough as a cook!

A day early for Valentines: lobster tail and shrimp scampi.
It actually tasted kinda good, until all the salt hit. I’m still trying to rehydrate after all that sodium.
Yep. I made it on the 6th. I still have a quart left. That’s about three servings. Roomie made BBQ beef a week or so ago. Had some of that for lunch. And there’s still two of those flat Glad containers of spaghetti left.
But I did cook breakfast (dinner, for her) this morning. Pancakes and bacon. Unfortunately, we’re out of the Trader Joe’s Grade B maple syrup. (Hint: Always go for Grade B. It’s maple-ier than Grade A.) So we had to use the sugar-free stuff I use in my morning gruel. Wasn’t bad, but I prefer real maple syrup.
