What's for dinner tonight?

One of my personal favourites!

I spent the day driving the preschooler to a Living History museum and back. We had a lovely time, but it was an ordeal. At one point we had to stop at a bar in the middle of nowhere to ask for directions. The barkeep made me buy a drink before he’d help.

ANYHOO

I am still trying to pull it together for dinner. I made a bean salad with black beans, white beans, spring onions, cilantro, salt, oil, and red wine vinegar.

Now I have some chicken breast thawed and will stir-fry it with whatever spices seem exciting when I make it to the stove.

Those two together should be sufficient sustenance.

Last night it was bacon. This amazing, very thick cut stuff I get from the farmer’s market. And more blueberries mixed with the honey and chopped nuts.

Tonight it will be chicken quarters fried in the bacon fat from last night. Cucumber and zuccini on the side and a slice or two of farmer’s market sourdough and butter.

Tonight is leftover ratatouille from the other night, fortified with chickpeas and Parmesan, served over angel hair. I am seriously jonesing for some Giordano’s pan pizza with pepperoni, mushrooms, and roasted red peppers, though.

I was out this evening so I stopped on the way home and got some Taco Bell.

Last night, fish’n’chips and coleslaw. I wish I had haddock, but I could only get cod. Still, it was good. I’m thinking about reheating the leftover chips and stuffing them with scrambled egg and sausage into a pocket pita for breakfast.

As usual, I made entirely too much fish (two packages of frozen cod from Trader Joe’s). I cut the fillets in half, and I had two halves. The SO had 1½ halves So now there are 6½ pieces of fried fish in the fridge. At least I didn’t go overboard on the potatoes. The SO made way too much coleslaw. With raisins in it.

I’m thinking tonight’s dinner might be reheated battered-and-fried fish.

Super Husband is smoking a pork shoulder, so we’ll have pulled pork sandwiches. I’ll do a tomato and mozzarella salad to go with it.

I have the fixin’s for Taco Night, and for a bacon-spinach-onion quiche. Just have to decide the order - which for tonight, which for tomorrow? Haven’t decided!

Friday night was crab cakes and a few snow crab legs, and last night was takeout Chinese since errands took up most of the day and I wound up hitting the trifecta of hungry, thirsty, and hot, which makes for a cranky purplehorseshoe.

I just had my main meal of the day: a very British fry-up, complete with kippers and so-called baked beans in tomato sauce. About the only thing missing was the black pudding, of which I have none at the moment.

Not something I eat every day, but I do like to indulge once in a while. In the fridge, I also have burrito fixings, Spanish rice, chicken paprikás, German and Polish sausages, pulled pork, and some containers of frozen curry for later in the week.

… Oh yeah, and I’m fixing deviled eggs (which, granted, isn’t really a meal, but I haven’t made them in a while and they’re soooooo good!)

That’s almost what I had for lunch today, only I use the Kroger brand pizza sauce because it is pretty low in carbs, and I add chili powder.

Tonight I had sauteed chicken thighs with spinach that I sauteed in the grease from the chicken.

Lasagne! I make it vaguely Milano-style, with bechamel, no icky ricotta. Although I never manage to make enough bechamel! I used Oaxaca cheese instead of mozzarella, very similar style for cheaper price. My ragu had onions, carrots, eggplant and mushrooms, lots of red wine and garlic, beef, and a box of strained tomatoes. Right at the end I finely chopped a giant handful of parsley, basil and marjoram from the garden and stirred it in.

It’s in the oven now. Smells amazing.

Last night was reuben sandwiches and fried potatoes. Nothing healthy about it, but damn it was good!

Going out to dinner - don’t know where yet.

Last night really was taco night. I thought I’d try soft tacos for once, but even the “soft taco” size tortillas seemed a little big (1/3 lb of beef was barely enough for three of them; I made a cheese quesadilla from a fourth).

It’s Monday, so tonight is frozen leftover pizza night.

Turns out the answer was “all of the above.” A slice of quiche AND some deviled egg halves? Yes, please, I’d like some egg with my egg. It all came out great, and I had a slice of quiche and the small amount of taco leftovers to take to work with me (quiche for breakfast, ground beef and chopped veggie stuff as an ersatz taco salad for lunch) which worked out splendidly.

Except … now I’m out of ideas for what’s next. :frowning:

Raspberry mint lamb chops (made with a Chambord sauce) and jasmine rice, nom nom nom nom.

I cut up red potatoes, an onion and carrots and tossed them in a backing dish. On top I placed chicken legs. Then a touch of oil and salt.

I’s in the oven roasting under the broiler now.

Can’t wait!

No coffee 'cause I’ll be up all night but a nice glass of milk and a glass of OJ.

You know that shaved beef salad we had the end of last week? The SO had another one last night. I used the rest of the beef to make a sandwich. That Dietz & Watson beef is really good, but it doesn’t keep very long. It tasted fine, but I could smell it was going to go bad soon.

I’ll likely put some of that fried fish into the toaster oven tonight.
