What's for dinner tonight?

Breakfast was scrambled eggs and ketchup toddler style. Meaning that it was mostly ketchup with just a bit of scrambled eggs for color. Dinner will be baked ziti --without ketchup much to the toddler’s dismay.

Last night I had some leftover ratatouille from a week ago. I figured if it made me sick I wouldn’t have to come to work, but unfortunately it was just fine.

Tonight, maybe a quiche and salad.

I ended up going to Subway - had the new applewood smoked BBQ with lettuce, pickles and onions, and Garden Salsa Sun Chips. Very tasty.

Ham sandwich – I managed to chow down an entire French bread.

We’re making Chili, and are going to make a fire in the fireplace. It is the middle of August in central Indiana. It is currently 63 degrees. It was upper 80’s yesterday. This has been one strange summer… but I can’t say I’m complaining about getting a good bowl of chili.

BLTs.

There. That was easy.

Oh wait. We may not have any bread. Crap.

A layer of potato, a layer of browned Italian sausage with pepper and onions, a layer of shredded cheddar. Salt and pepper the potatoes, of course. Repeat layers. Scramble eggs, milk, salt, pepper and garlic powder. Pour over layers. 10 to 15 minutes before done, top with Parmesan.

Hmmm, what to bring for lunch tomorrow?

I just ate some pickle salad. It’s a thing I do sometimes. I pull out the mandolin and shred whatever veg are in the fridge, this time including cabbage, carrots, cucumber and onion, then dice the non-shreddables (white corn, green onions, parsley, mint, tomatoes, and a few white peaches for fun) and cover it in vinegar, with a pinch of salt, pinch of sugar, loads of pepper. Then to eat it, drain the vinegar off the serving, add back to the bowl, and top up the veggies again. Today I stirred my drained pickle shreds with a handful of spinach and arugula, and a drizzle of olive oil. My last bowl of this salad lasted about 2 weeks before I didn’t have enough veggies to refill.

Opa (moonfish I think, tastes kinda like a cross between tuna and swordfish) on the griddle, leftover ratatouille, leftover salad, saffron rice.

Don’t you just HATE it when that happens? I’ve done the exact same thing!

Oh - dinner. Right. Let me think. Meatloaf? No. Length of preparation time makes this non-viable. Italian Beef? No. No appropriate rolls. Although I could buy some…no. Too much effort. Polska Kielbasa and sauerkraut? No. Only the husband would eat it and besides, I can’t stand the smell of sauerkraut. Mac and cheese? Maybe I could make THAT to go with the sausage - no. Husband would still want sauerkraut. Besides, I’m not feeling especially noodly or cheesy. Pizza bread? Hmmmm - bread, sauce, cheese, oven - that’s a distinct possibility. And I do have the bread - and the appropriate cheeses.

Pizza Bread is what’s for dinner.

It’s because of thought processes like the above that I usually have either cookies or a bowl of ice cream for breakfast. It’s just way less taxing.

There was indeed no bread. I ended up making baking powder biscuits to have with the BL&T. Biscuits make crummy sandwiches.

Anyway, tonight: there is a big bowl of pulled pork barbecue in the fridge. I’m going to make tabbouleh, cucumber salad, and tomato and mozzarella salad over the course of the day, so that at dinner time I can just plunk everything on the table and say “eat.”

That’s what I’m telling myself, anyway.

I’m not holding out any hope for anything good; it’ll either be something cooked to hell in the crock-pot, or one of those godawful freezer meals my wife gets from her friends who she swaps meals with. (They all cook 5 meals worth, freeze them in 1 meal portions, and swap them). Her friends seem to make “healthy” stuff which almost always has weird textures and is bland as hell. Often they do fucked up stuff like “mexican haystack” which in this woman’s mind was rice, soupy taco meat, peaches, orange bell peppers and onions. Peaches! WTF?

Last night was Sloppy Joes (which I don’t like but everyone else does) and corn on the cob.

Tonight maybe enchiladas.

We still do not have a kitchen as the contractor renovating it is taking longer than scheduled (shocking). So, probably a caprese salad with basil and tomato from our garden and either a chicken from the store, or some cold mezze salads.

Hmmm. Mexican Haystacks are a thing in my world, too, but it’s always just regular taco/burrito type stuff on top of salad or corn chips. I have no idea what the heck was up with the peaches…

Cheeseburgers. Or a nervous breakdown. Not sure yet, ingredients for both are defrosting right now. Hubby and kids are hoping for cheeseburgers, though.

Thai food

Hmmmm… I’d stop at McDonald’s (or Arby’s, or Burger King, or KFC, or Brown’s, or Taco Bell, or ANYWHERE) on the way home before I’d eat rice, soupy taco meat, peaches, orange bell peppers and onions. PEACHES?? FOR REAL?? That’s just bizarre. Or you could always come over by my house and have pizza bread. :smiley:
