Still haven’t done major grocery restocking from the Fridge Meltdown Disaster (new fridge just arrived Monday), so I think it’s whatever stuffed veggies have survived the fridge disaster (red and green bell peppers, zucchini, and maybe mushrooms) stuffed with rice, lentils, onions, tomato, and maybe currants and some kind of Middle Eastern spices.
Interesting – I made chili last night, too. Lots of beans and tomatoes to stretch out the ground beef, with perhaps a bit too much chipotles and adobo sauce. It came out spicy!
No clue what’s for tonight. There’s a couple of tuna pieces in the freezer – oh, and I have leftover rice from Chinese takeout and was considering re-frying it. Not sure if it’s too old/dried out, though, since it’s from Saturday.
Tonight, rotisserie chicken and mandarin orange salad with sliced almonds, chow mein noodles (dry), and asian sesame dressing. And Innis and Gunn beer for beverage! Yay! I love it when SWMBO buys me manflowers! Dessert is mini dark chocolate caramel and white chocolate apple cheesecakes and vietnamese iced coffee.
Tonight, my wife found some kind of PF Chang’s noodles in the freezer that I’d bought a long time ago. We had that along with sugar snap peas. Not terrible at all.
As for the nasty Mexican haystacks… I ended up eating some of the taco meat and rice, and left the peaches, peppers and onions alone. Oh… I forgot- there were sliced avocados in that bag too. So peaches, peppers, onions and avocados. Naasty.
IIRC, I also made myself a sandwich at about 8:30 that night when I got hungry.

I did get the tabbouleh, tomato salad, and cucumber salad all made yesterday, and there’s lots left. It’ll have to be leftovers tonight.
So I was completely wrong about supper last night. I blithely assumed that what I wrote above was on the menu; nope. Chicken mole that SWMBO made. Sooooo good! Still had the cheesecake though. I think tonight will be leftovers, Yum!

Some kind of chicken wrap. It was really good.
Not dinner and not tonight, but tomorrow (Sunday) we’re hitting Crepes and Co for their excellent brunch. They give us a free bottle of wine during our birthday months, and the wife’s birthday is in August.

Something involving a large lake trout. Any ideas?
Here’s an interesting recipe: Broiled trout with bacon, onion, and raisins.
Thinly slice some red potatoes and red onions and layer them in a large baking dish with really good olive oil, salt, and pepper. I like onion so I do about 50/50 but you can use whatever ratio you feel is good. I like it to be about 1 1/2 inches thick before I put it in the oven but I like potatoes.
Bake that at 350 for about 45 minutes until the potatoes are soft and crispy around the edges. Don’t be afraid to let it go longer as the fish cooks pretty quickly. They should be soft and crispy around the edges.
Cut and debone the trout into 2 filets. If you leave the skin on (I prefer to but it’s your choice) then make sure to remove all the scales. No one wants scales in their potatoes.
Lay the trout filets skin side down on the potatoes and drizzle with a generous amount of olive oil. Rub in salt, pepper and a good amount of dried thyme (rub the thyme between your hands to break it up and release the oils).
Pop that sucker back in the oven for another 20-30 minutes depending on the thickness of your fish until it’s flakey.
Serve it with good crusty bread and butter (or more olive oil) and a dressed green salad and Bob’s your Uncle.
My Father (God rest his soul) who refused to eat fish of any kind would ask for seconds of this dish.

Those both sound yummy, but I have no bacon, no red onions, and no red potatoes, so I am making this, except with grilled trout instead of steamed sole.
Nobody will cook for me so I haven’t, so far, had dinner.
I think it will end up being oatmeal.
Husband and kid bonded over noodle soup.
Burritos made with shredded Trader Joe’s pot roast, salsa, onions, avocado slices, Tapatio sauce, and sour cream. SO put cheese on hers. Also, refried beans and chips.
On vacation, and went out to a beloved local seafood restaurant. Had a cup of piping hot she-crab bisque; fresh bread; fried clams, shrimp and scallops; mixed greens; and a slice of coconut chocolate cake for dessert, with a good cup of coffee. Very yummy. Took a nice twilight swim afterwards to burn off some of those calories!
