Chicken, rice, and carrots.
Last night I made some bacon-cheese grits, smothered in shrimp, onion, garlic, and green pepper which had been sautéed in the bacon grease. A little TJ’s habanero sauce added at the table. Damn it was good!
So far I am not so sure but leftovers probably.
Hell if I know what’s for dinner tonight. Last night was a couple more of those burritos, with salsa, onions, and avocado.

Leftovers tonight, we’re up to our eyeballs in 'em.
So tonight we’re having triangle fish and chips for supper, so named because the fillets that come in the box obviously come from triangular fish. Beer and white wine will be involved. Very possibly some gin and tonics as well, it is Friday!
I bought some lamb flank steaks. They’re cute little miniature flank steaks, a little bit smaller than your hand. Pounded them out to tenderize/expand them a bit, and then rolled them up with carrot sticks in them and tied them with kitchen twine. I browned them in olive oil with onions and garlic and a bit of tomato paste, then added meat stock and a rosemary twig. They’re braising right now and making the house smell great. I’ll serve them with pilaf and a salad of cold cooked string beans and zucchini.
Teela if you have any leftovers, can I have them? Pretty please?
We made a pizza with alfredo sauce, quattro formagio, mushrooms, fresh basil, diced tomatoes, ricotta cheese, and a sprinkling of parmesan.
Leftover mixed grill: Banger, back bacon in barbecue sauce, ground beef patty with onions and steak seasoning, and mash with Kraft cheddar cheese mixed in. Artery-clogging rich, but absolutely delicious!

I was really excited about it until I reopened this thread, now I just feel lazy.
Was going to be meatloaf, but with the strong storms and all, it’s changed. I’m having nachos. Don’t know what husband is having. Tomorrow it will be meat loaf and mashed potatoes and gravy and some form of vegetable.
We have leftover (delish!) roast pork, so I’m making happies. That’s family parlance for leftover anything, usually meaty stews or roasts, cubed, mixed with whatever leftover veggies, sauce, cheese, gravy, etc., seems worthwhile, then wrapped in puff pastry and baked. Makes leftovers SO much more palatable, hence the name. Tonight’s will include the pork, garlic, sage, leftover roast potato and onion, cider gravy, some pepperjack cheese, sauteed cabbage, and peas. Happies almost always have peas

Seared ahi tuna , smashed red potatoes, grilled walla walla oinion fresh tomato salad and cole slaw. Husband steak instead of tuna.
Beefsteak marinated in Montreal seasoning, deluxe baked potato, green beans, all with real bacon bits. Iced tea with golden sugar and lime for a beverage.
Sliced hot Italian sausages, fresh red and green peppers, mushrooms, onion, green onion, garlic, and a hot pepper from my friend’s garden, simmered in a can of herbed diced tomatoes and served over rigatoni with parmesan cheese and a nice cabernet sauvignon.
Not bad for a bachelor Saturday night. And leftovers galore!
Last night I steamed an artichoke, which I haven’t done in a long time and apparently don’t remember, because it took forever. Or maybe it was just a tough one. It still tasted pretty good. After that, I made shrimp etouffee.
I put some things on the menu this week which we don’t usually cook. I was feeling a bit creative at the time, but I’ll no doubt be kicking myself every night this week when I come home tired after work and don’t want to go to the effort.
Tonight? Fried shrimp, pasta shells with butter and Bacon Salt, cucumber slices from our own garden, and homemade chocolate mousse for dessert.
