Last night: Meatballs and egg noodles with brown gravy, slices of beefsteak tomato broiled with an asiago cheese topping and drizzled with balsamic vinegar, and sautéed spinach.
My daughter wasn’t home for dinner last night, but when she got home and I told her what she missed, she said, “Yuck.” sigh That’s my li’l angel!
Me again…apparently I like to think about food when I should be working.
Last night: Breaded chicken strips with a sauce which I billed as “an apple-citrus glaze”. It was applesauce + fig jam + orange juice.
Served with biscuits from a can, broccoli, and some partially-singed carrots. They were good anyway.
It’s Wednesday. Which is egg night. That’s important because I never eat breakfast so once a week I like to get my eggs on.
Today it’ll almost certainly be a hash of fried potatoes, sweet bell peppers, onions, crumbled bacon (since I’m out of breakfast sausage), all covered in a three large beaten eggs with a dash of hot sauce and worcestershire sauce. Toast, tomatoes and cucumbers on the side.
I bought asparagus and mushrooms yesterday because I don’t eat enough veggies and I think tonight I’ll try my hand at some sort of potato and asparagus cream soup. The only question is, will the mushrooms provide enough savoryness that I can forego some chunks of ham? Guess I’ll find out!
Last night I lit up the ol’ Weber grill and grilled Trader Joe’s carne asada. While it was cooking I cut a slice off an onion and quartered it, separating the arcs, and I sliced an avocado. I heated small corn tortillas in a little oil in a cast iron skillet. We had carne asada tacos with salsa, avocado, and sour cream. I had onions, and the SO put cheese on hers.
Chicken stew: Chicken thighs, home-grown potatoes and carrots, mushrooms, garlic, shallots with olive oil, tamari, sherry, a little agave nectar, bay, oregano, thyme, black pepper, and coarse salt.
This has been a good cooking week for me. I made sauteed baby greens, mashed potatoes and Jamie Oliver’s chicken in milk, which was fabulous. The following night was shrimp risotto and a salad. Tonight was leftovers, but I did make a pound cake topped with fresh strawberries and peaches. I also made Italian drip beef for dinner tomorrow. After all that, I’ll be ready to order takeout.
Tonight was Cuban-style pork butt, marinated overnight in olive oil, lime juice, orange juice, onions, half a ton of garlic, cumin, oregano, and bay leaf. Cooked in the slow cooker, shredded, and made into tacos with corn tortillas, guacamole from the Mexican grocery a block away, and jarred salsa because neither of us had the energy to make pico de gallo. Tomorrow, I think, will be potato salad, lentil salad in Dijon balsamic vinaigrette, and maybe some simple sautéed zucchini on the side.
The mayo was homemade over the weekend, the result of a very successful experiment with five-minute immersion blender mayo. I never keep it in the house otherwise, so I have no clue what to do with it, and it doesn’t keep very well. Any ideas?
Last night was “raid-the-freezer-and-pantry” night: kielbasa sausage cooked with a sliced whole onion, and penne with pesto (Knorr packet) and I was surprised how well they all mixed together.
Extra pasta leftovers will be fried with bacon and more onion for dinner tonight.
So we’re going to try this one, except with added garlic, and with parsley instead of dill because we don’t have dill. And this lentil salad recipe. And maybe some simple sautéed zucchini or something.
Eatin’ early today at The Alley. Going to do half a grilled cheese sandwich (with bacon) and a side salad (versus the soup it’s supposed to come with). It’s a lunch special and besides, I can’t eat a whole one along with a salad. Then while I’m watching Dateline later tonight, I’ll eat chocolate fudge brownie ice cream.
Don’t know what husband is going to eat. Not my train, not my wreck.
Last night was beef, and … that was it. Inadvertent Atkins FTW! A baked potato ensued but was never even touched, so I think I’ll be making potato soup today or tomorrow. Also there’s some leftover grilled com so I will make a corn salad/salsa. Throw the corn in with some beans and tomatoes and … stuff. And things.
I’ve had a hankering for pasta salad, which I haven’t made in a while, so that will probably happen sometime this holiday weekend. There’s half a jar of capers in the fridge and some multi-colored pasta in the pantry, so I should be able to toss something together.

I don’t know what’s for dinner tonight. But I’ve a hankering for fish. I thought maybe I’d make pan-seared halibut with pesto, cherry tomatoes with garlic and pesto, and fried potatoes.
Tonight will involve sockeye salmon, but that’s about as far as we’ve gotten. Ideas welcome. We have a vat of pico de gallo made with yummy heirloom yellow tomatoes the other day and a bit of leftover potato salad the other night. Also, more fresh tomatoes, yellow summer squashes, eggplant, and peppers. Maybe grilled salmon with chimichurri and a side of grilled eggplant slices brushed with olive oil, a ton of garlic, and some pomegranate molasses.
A Wolfgang Puck Whole Wheat Hummus Wrap (red onions, feta, cucumber, arugula, kalmata olives, tomato vinaigrette) that I was given from the mission I volunteer at.
I was there at 5 am and on my feet the entire time till I left at 2 and fell asleep on the couch at home for a few hours. I’m so glad I have this because after 9 hours chopping vegetables, breaking down chicken and doing prep work I really don’t want to cook.
I sautéed some mushrooms, onion, and garlic in butter; then added about a tablespoon of flour and mixed it up. Got the half-and-half out of the fridge, and poured in a pint. I brought it to a fast simmer, stirring, and added some sherry. Then I added I guess a pound of shrimp. Once the shrimp was cooked, I added freshly grated parmesan and we ate it over linguine.
We didn’t have any garlic bread, so the SO made some out of English muffins.
We have banana cream pie for dessert… once we’re not full.
