What's for Dinner/

Smash burgers and corn on the cob.

We’re vacationing in the cape and just had lobster dinners!

LOVE smash burgers! Lobster dinners, also.

We had Bang Bang Chicken tonight. Made a sauce of peanut oil, sesame oil, peanut butter, mirin, Chinese chili-bean paste, soy sauce, and Chinese black vinegar. Grilled a couple of chicken breasts with garlic and a touch of five-spice powder, then tore it into shreds and stirred some of the sauce into it. Shredded a half-head of green cabbage, put it in a bowl, spooned some sauce over it, topped it with chopped fresh mint, the chicken, and some julienned scallion and cucumber.

Very nice. Asian chicken slaw, basically.

Kung pao chicken take-out.

Treated myself to dinner at the new Ruth’s Chris Steak House in town. I had an RC chop salad, petite filet (out of this world), lobster mashed potatoes (delicious but too big; got a doggy bag), cheesecake (ditto); washed down by ice water, Merlot, and coffee.

Today it’s going to be pork tacos arabes and leftover red beans & rice.

Ribeye steak (1 steak for two people), parmesan garlic bread, string beans in tomato and onion sauce.

Talenti black raspberry chocolate ship gelato for dessert, if we have any room.

Mussels steamed in white wine, butter, parsley, etc.

A lobster and bacon pizza.

And a grilled eggplant, mozzarella, and tomato sammich.

Last night I mixed some Old Bay seasoning with flour, dried some tilapia filets, pressed them into the mixture for a light dusting, and sautéed them in a little olive oil. After turning them, I added capers and a tablespoon or so of unsalted butter. For sides, I made mashed cauliflower, and green beans.

The mashed cauliflower came from Trader Joe’s frozen section. I prepared it according to the stovetop directions. It tasted good, but I was expecting more of a mashed potato consistency. In any case, it was a pretty healthy meal.

We are getting take out fried chicken. I’m doing cole slaw and some other sides with it, I’m not sure what just yet.

Patty melt, iced tea, a slice of strawberry swirl cheesecake.

Rice topped with fish, onion, green peppers and a fried egg, with Pad Thai sauce. Just made it up myself.

I made unstuffed cabbage.

Seafood lasagna. It was the last leftover piece from one I made Thursday. That’s the downside of lasagna for a single guy like me. I love it but when I make it, it’s what I’ll be eating for the next three days.

Not entirely sure, but I was doing a freezer inventory…I found four beef shanks and a small package of oxtails, and I set them to thaw. I’ll be doing some sort of braise/stew tomorrow. I’m just not sure what direction I’ll go for seasoning.

Probably thin steaks, rolled up with stuffing, and brown gravy. Broccoli on the side. (Salad as always).

Slow cooker corned beef with Guinness reduction, carrots and onion, mashed potatoes with kale and lots of butter, and iced tea.

Tonight I made chicken Tikka Masala with rice and a green salad.
