What's for lunch today?

I’m eating a bowl of what I can only call “accreted” foodstuffs–reheated white rice, spicy cucumber pickles, brined artichoke hearts, and home-pickled daikon with Sriracha. You?

Kicked up Ramen. Used a cup of my leftover homemade turkey stock, then made a package of shoyu Ramen per instructions. Poached an egg in the stock, and added mined garlic, sesame oil and green onions. Easy and fast.

I eat the same thing nearly every day: a fried egg and a 60-calorie yogurt.

Susan, that sounds like what my Thai wife often eats for breakfast. Tiny little cans of pickled something.

My lunch was simple. Warmed up thin spaghetti from last night with some nice German Butter and fresh ground pepper medley. Tossed with Parmigiano-Reggiano grated off a big chunk.

I wish my wife liked kimchi but I have to save it for when she’s away, and she only eats pickled herring when I’m out of the country.

Aldi has some breaded haddock filets in the freezer case and I baked a boxful a few days ago. Last night, I put two of them on a cheap hamburger bun (perfect fit) with some tarter sauce and dill pickle relish. I took it out of the fridge this morning to bring to work but left on my desk so it would be room temperature. The one I ate last night was better (I’d heated the filets in a dry skillet) but today’s was pretty good.

Squid in ink sauce. This is only the third time I’ve tried making it myself, and I’ve noticed a few things I’ve done wrong in the past, so my hopes are high on this occasion. The sauce is incredibly black and goes wonderfully with white rice.

Dosa with tomato pepper pachadi (chutney). Thanks to my mother-in-law for both the dosa batter and the pachadi.

ETA: I guess technically pachadi is a bit different from chutney… but I’m not sure I could explain the difference.

Tuna salad with hot pickles on homemade amaranth bread.

Amaranth bread? Sounds tasty, and I’ve never had it before. I’ll keep an eye out for it.

Today it’s going to be a late lunch take out from the local Greek place. Pastitsio (good comfort food), a nice salad, and they make a killer lentil soup too.

Leftover Thai matsutaki mushroom with vegetables and chicken (okay, that was breakfast), open-faced sandwich of toasted whole grain bread, rosemary mustard, prosciutto, and Tillamook cheddar, with an apple.
