It’s a beautyfull day in northern Illinois. Sunny, upper 60s, a hint of a breeze. I’m going to yoga after irk, YEAH, my fave yoga teacher is leading the class. Din-din is orange chipotle chicken and mushroom barley, courtesy of the irk cafeteria. I brought my lunch but bought fuds to take home for dinner.
And I have NOTHING planned for the weekend. Except maybe eat a bag of Jay’s potato chips while watching tv.
I am going to this with my twins after I pick them up from preschool today!! I am excited, but a little bummed because DH is out of town this weekend and can’t go with us. Poo
And I’m home. As I expected, it was a very small funeral, but I was amazed that my Uncle Bob showed up. He’s sure gotten old in the 16 years since I last saw him. The drive from the church to the cemetery was interesting - a large part of it was down I-95! And we were almost T-boned by some woman who obviously wasn’t paying attention to the flashing lights and the FUNERAL signs on all of the cars. And I’m not going to mention the idiots who got between cars in the procession. Can’t you just pull over for the 15 seconds it takes for all of the cars to pass? :rolleyes: I don’t think there were 15 vehicles, including the hearse.
After we left the cemetery, we went to lunch at a very dark but very very yummy restaurant for a 2-hour lunch. I’s soooooo stuffded!!
It’s raining right now, and we really need it. And it’s a good excuse to veg for the rest of the night.

Everything I want to say is coming out as me whining.
The good news of today is that my van’s been off being fixed and I’m finally going to go pick it up tonight. And the noise that was originally supposed to be expensive to fix turned out to be not a problem at all.
I just finished making this for a church function I am attending on Saturday. It says serves 9, but since I tried some, I think it now serves 8, LOL. It was pretty good.
Chicken Saute’ with Lemon, Cumin and Parsley
Serves 9
Ingredients:
3 lemons
9 Tbl.Olive Oil
3 large red onions, thinly sliced
3 medium cloves of garlic, smashed and peeled. ( I just use my press)
2 ¼ tsp. ground cumin
Salt and fresh ground pepper
¾ cup chopped fresh flat-leaf (Italian) parsley
6 boneless, skinless chicken breasts trimmed and cut into ½- inch thin strips.
Finely grate 3 tsp. zest from the lemons and then juice the lemons.
Heat the oil in a 12-inch skillet over medium heat until shimmering hot. Add the onion and garlic and cook, stirring frequently, until the onion begins to soften, 5-8 minutes. Add the chicken, lemon zest, cumin, ½ tsp. salt, ¾ tsp. pepper and cook, sauteing, until the chicken is just cooked through, 12-18 minutes. Remove the skillet from the heat and stir in the parsley and 6 Tbs. of the lemon juice. Discard the garlic if you like ( only need to if smashed and large pieces present). Season to taste with salt and pepper.
The idea is to serve it warm over a bed of fresh spinach leaves. It is going to be great. A bunch of us are making batches and then our woman’s axillary is going to have a 3 course sit down dinner and devotional.

Moving on, I stopped at an Italian market yesterday and got a box of those fancy cookies. I’ve been snacking on them all day. There’s about ten different kinds of cookies in the box so I figure that makes for a balanced diet.
Friends from work came and took away the stove and freezer Mrs. Plant v.3.0 wanted to be rid of.
Corned beef sandwiches and fries for dinner.
I rubbed Mrs. Plant’s feet with baby oil.
