FCD is waiting on the neurologist to see his dad. He expects to be at the hospital all day, poor guy.

I’ve got the bean soup simmering away, so supper will be ready whenever they get back. First load of laundry is about to come out of the dryer. Second load will go into the dryer. There is no 3rd load today. But a nap may happen.

I don’t know if there’s any difference between white and yellow cornmeal. I suppose it comes from different types of corn, which could affect the final taste, but who knows?
I like cornbread no matter what. With corn kernel inclusion or without. With sugar or without. I’ve even eaten cornbread with jalapenos in it, which I didn’t really care for very much, but I ate it. Others liked it.
That’s my consensus, for what it’s worth. Do whatever pleases you.
Also, I have no advice re: the in laws situation. My experience in that respect hasn’t been good and has colored my feels a great deal. I certainly feel for you however.

Nothing else to report. We’re going in to the ‘big city’ in a bit for **Wifey’**s PT and to hopefully get two of her tires fixed. She had her studded tires mounted a couple months ago and since then one of the tires has had a very slow leak. Now a second tire is starting to leak, very slowly. :face_with_symbols_over_mouth: She’ll be having someone else re-mount her regular tires this spring.

I got half a metric fuckton of trash taken out, including scooping the litter box. It really needs to be dumped & refilled with fresh, but I’ve got a Chewy order (hopefully) on the way.

Aaaand I just remembered I forgot to see if they have suet cakes. The birdies are chilly & hungry … though today is sunny and stuff is thawing. Narrowly missed having an icicle fall on my head as I was playing Trash Fairy.

And I missed the last pickup plus the new faucet generated additional trash, so my bin is getting full for the 1st time since I moved here.

Meanwhile, a small load of laundry is tumbling, and once that’s done, I desperately need to wash my damn hair. There’s a chance Gentleman Caller may visit, now that the roads are less messy. And even if he doesn’t … I just need to wash my damn hair. But I’ve found a shower has more satisfying water pressure if I’m not sharing with the washing machine.

Also need to refill the rat water bottles, and I suppose should go ahead & feed the damn things, too.

If you call their customer service number they might be able to pop some suet cakes into your order. They’ve been very helpful to me that way, adding or subtracting to an order close to the shipping time.

It’s best to coat the whole corn or jalapenos or whatever with some of the cornmeal mix, this helps stop everything from sinking to the bottom.

It’s a gloomy day today, rainy and foggy. We did all of our errands yesterday, so sloth is ruling the day.

Laundry is in the dryer. Monkey promptly re-christened his litter box, snarfed down some gooshy-food, then got the zoomies so I tossed him some treats to chase around.

I ordered him a little battery-powered mousie toy; maybe it’ll keep him occupied while I’m at work. (Or he’ll promptly knock it down the basement steps into my Pile O’Crap and we’ll never see it again.)

Note to self: I have GOT to toss the half-pot of beef stew in the fridge before it turns into a science experiment. 'Twas delicious, but too much for one person.

Matter of fact, there’s probably a few things lurking in the fridge that are nearing a sentient state. I have a feeling that lettuce is about to wave back at me.

That’s really good (with cheddar in it as well). You know what’s better? Cheddar and chipotle cornbread. Unfortunately, The Spousal Unit is less tolerant of spicy-hot nowadays, and my cow-orkers are Pacific Northwesterners.

Speaking of packaging overkill, I had some vitamins delivered today (not from Amazon): three small bottles in a way-too-big box that contained so much packing paper I nearly thought they’d only shipped one bottle! And the bottles weren’t fragile.

I’m never quite sure what time the cleaners will arrive (I could text the company the day before and get an ETA, but it never really matters). I’d hoped they would come in the late morning, but at 1pm I decided it was time for lunch and that the doggy and I would go hang out in the living room and I’d read until they arrived. 90 minutes later I finished my book, and nearly started the next one in the series but decided to return to the home office and kill some more time online while waiting. I cleaned up from lunch, grabbed a protein shake, and headed down the hall…and just when I walked into the room and looked out the window, the cleaners’ car pulled up. :smiley: As I started typing this Bailey was huddled under the desk at my feet, but 3 people came today (usually there are just 2) and they’re done already/they just left.

Time to get the laundry going, make some afternoon popcorn, and start watching TV!

Howdy Y’all! We did all the things! Go Us! Provisions were procured, meds picked up, errands taken care of, and we have our New Year’s coifs. Plus we did the geezer N.O.L. thang at the hog trough GC. Now we are home in our comfy stuff. Chillage, and sloth have commenced and soon day drinkin’ shall happen.

MOOOOOOM the color of the corn meal does not matter so much. I usually use white cornmeal for cornbread. Whole kernel corn is good, but as JtC said, coatin’ the kernels in corn meal helps prevent ‘em from sinkin’ to the bottom. Whole kernel corn, jalapeños, and pepper jack cheese all go in my Mexican cornbread. Sugar is an abomination unto cornbread. Sugar is for sweet corn muffins. No sugar in cornbread is a hill I am prepared to die upon.

Meanwhile, I got hungry for the 1st time in days - I’ve barely eaten since Christmas - and for some reason am in a better mood today, so while I await the evening’s entertainment to arrive, I’m treating myself to some Mongolian beef, soup, and dumplings, plus a multivitamin, cuz I have been taking shit care of myself lately. Probably more food than I’ve consumed in a week.

Oh, and in case any Mumpers are clutching their pearls over the fate of the poor birdies waiting for their suet … I did toss a cupful of dried corn out. Most of the snow has melted, so it seemed visible. Betcha the squirrels can sniff it out, at least.

and FCM reminded me that yesterday since aunt has a rather impressive very meaty hambone so she bought 3 bags of beans 1 pinto and 2 of some multi-bean mix well I did not know that after soaking all night 3 small bags made a hill of beans … we’re gonna have large 2 pots of ham and bean soup …

Recipe? I just use the one on the Alber’s box. (I just got back from picking up a box.)

INGREDIENTS

  • 1 cup Albers® White or Yellow Corn Meal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg lightly beaten

INSTRUCTIONS

  • PREHEAT oven to 400°F. Grease 8-inch square baking pan. [I use a cast-iron frying pan.]

  • COMBINE meal, flour, sugar, baking powder and salt in medium bowl. Combine milk, oil and egg in small bowl; mix well. Add milk mixture to flour mixture; stir just until blended. Pour into prepared pan.

  • BAKE for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Serve warm.

  • NOTE Recipe may be doubled. Use greased 13x9-inch baking pan; bake as above.

You might want to omit the suger. :wink: Also, I don’t use an 8-inch square baking pan. I slather the inside of a 10-inch cast-iron frying pan with Crisco and cook it in that.

For the chipotle-and-cheese cornbread, mix about a cup of shredded cheddar into the batter. Chop one, two, or three canned chipotle chiles and mix that in. I find one chile to be a bit on the mild side. Three chiles make it pretty hot. Two seems tolerable for people who aren’t used to eating hot spices, but still hot enough for me to enjoy. Then pour the batter into the cold, Crisco-slathered pan and bake it.

Meanwhile, I have some scalloped potatoes with ham in the oven. I must say it is nice to be cooking for myself again, instead of having my sister’s vegetarian stuff. I’m not opposed to veggie, in fact I was veg for a long time, but she is one of those veggies who just keeps adding crap to an already perfectly good dish. My cooking idea is keep it simple, good ingredients, let them do the work.

Evening all. Drove about 7.5 hours and nearly 500 miles today and got to my stopping place about 1:30pm…to find out they didn’t accept incoming folks until 3pm, unless you paid an extra $25. So went to the Casino that’s in town and ended up winning $50 at Blackjack (actually was $100 ahead, but risked half of it on the last hand and…). Checked into the hotel and watched some TV, now need to head over to the Huddle House for dinner and get ready for bed–the travel weariness is beginning to hit me now.

Most humble apologies, have read all but processed little, so once I get home tomorrow (about 4 more hours on the road), I will try to do better.

Since I have been somewhat of a productive adult today, I decided to go ahead and finish up the schedule for servers for church services in January. I had already done the one for this Sunday since the office is closed this week and I needed to get that done so it could be printed in the service bulletin which was printed last week. Anywho, it is now all done for the month and the email with attachment sent. Let the weepin’, wailin’ and gnashin’ of teeth begin. I figure I’ll here a few “I can’t do that Sundays” even though I send out a very nice email toward the middle of each month askin’ for availability for the comin’ month. Such is my burden. Woe is me!

VanGo while I enjoy the occasional fancy meal, most of our cookin’ is good, simple, basic, tasty stuff, so I agree with you on that.

FCD was a tad miffed… Our hospital is small, and the staff is accordingly small. They don’t have specialty physicians there full time - instead there’s a rotation so that after they finish their daily appointments, they go to the hospital and fill in where needed. Ergo, the neurologist didn’t show up till after FCD and his mom left. But he called and they talked and I guess they’ve got a plan for tomorrow.

He also got a call from a home care agency and they’ll be making a visit at the apartment. MIL is already resisting “What if he gets upset about strangers in the house??” OMG, she’s making us crazy! There are times when FCD just wants to say “Fine. Do it your way. Have a nice life.” and leave. It would be hard to blame him.

Speaking of tomorrow, I have to go see BIL at the rehab place and take his shot record, such as it is. He’s had his shots and boosters, but only the first shot is on his card. I’m going to look up FL and see if they’ve got records on line the way MD does. So that will be my day. Tonight will be me and Mel and much sleepage, I hope. In about an hour - after MIL takes her shower.
