My Super Bowl party “group” is generally a relatively low-key affair with maybe half a dozen people, but we eat well. It’s my turn to host, and I always enjoy cooking for others. This year, with no obvious themes like Philly cheesesteaks readily available, I’ve turned to comfort food. We’re talking sloppy joes, artery-clogging mac and cheese, lil’ smokie casserole, and s’more nachos. My dietician can jump off a bridge, it’s a month’s worth of cheat days rolled in to one.
I’m making ‘Black-eyed pea and sausage chili’ and corn bread. My son is hosting a get together and that’s what I’m bringing. They’ll have a bunch of other stuff. I really don’t care to watch football so I won’t stay long. But fun will be had.
Not watching, but on a whim bought a pack of riblets at Walmart during the grocery run this afternoon. I’m probably too lazy to start the grill today, but they cook up nice enough in the oven.
Chili casserole (think tater tot casserole but instead of hamburger and mushroom goop, use a nice beanless chili)

Lil’ Smokie Cardiologist’s Nightmare (buy tubes of the u-bake cinnamon rolls, unroll the cinnamony dough strips and wrap them around Lil’ Smokies and bake, top with the included icing - they are completely vile yet somehow addictive)

I set up the smoker this morning and let some ribs go for 6 hours. Nothing else, just the ribs. They were pretty good! Call it an unintentional Atkins dinner. It’s just the two of us and we’re both reading with the game as background noise.
I am not watching the game. I made a breakfast casserole for dinner tonight with eggs, ham, hash browns, peppers, onions and shredded sharp cheddar cheese. I made scratch biscuits to serve with it.
I don’t care about the game, nor do I care about the commercials. they will all be on for the next few weeks. I am watching "Worst Cooks in America, drinking Wild Horse Pinot Noir and sewing.
A recipe we got clipped from a newspaper ages ago. You fry a pound of chicken nuggets (we just coat them in flour, but some might go full battered/breaded). Then saute a chopped onion, a few cloves of minced garlic and 1/4 tsp. crushed red pepper. Throw into the sauteed stuff a mixture of 1/3 c. water, 2 tsp corn starch, 1/2 cup Karo syrup, 1/3 cup ketchup and 2 Tbsp. soy sauce. Bring to bubbling, then put in the nuggets to coat them, and yum, yum.
We usually have a fresh potato kugel as our side dish. (grated potatoes and an onion, mixed with egg, seasoned with salt and pepper and then baked in oil)
I’ve been doing low carbs and I figured I’d be giving up on my diet for Superbowl Night. Got to the neighborhood potluck and realized that I live with Healthy Lib-Nerds.
So I was munching on plantain chips with guacamole and artichoke dip. Lots of peppers and crudités dipped in hummus. Little kabobs of heirloom tomatoes, mozzarella and basil leaves. Yummy sausages slathered in goat cheese.
I have a tradition of eating a bag of Lay’s Potato Chips during the game. I normally do not buy chips, not because I don’t love them, but they are on a list of things I don’t buy anymore in hopes of at least staying at my current weight. But once a year…
We had chicken marinated in teriyaki sauce, and mashed potatoes. We didn’t have a superbowl party. We lack a humongous long couch with several jolly friends including a sassy black couple and an Asian guy all wearing team t-shirts perched on it. In fact, we only looked at the game for about 10 minutes and then watched ‘Some Like It Hot’.
Being lazy, I just picked up some supermarket sushi rolls (salmon, and tuna, California rolls, and ‘crispy crab roll’ – made in the store, and very good). We had those before the game. I also bought a dozen pre-made, unbattered, hot wings that I heated up and we ate during the game.
