So far, a handful of mixed nuts, followed by a bowl of leftover veggie Thom Yum soup I made Saturday night. Next, I’m thinking of possibly pepper jack grilled cheese, or maybe I’ll go straight to hot chocolate with marshmallows. This thread is making me hungry!
Tonight I had lunch in one of the school’s cafeterias (a first for me as a grad student, but the undergrads were paying and invited me, and I can’t turn down a free meal). I had 2 hard-shelled beef tacos and spinach madeleine,a cup of hot cocoa and 2 cookies. It was nice, I didn’t have to make it myself, but god was the place a zoo!
I had a bowl of generic Cheerios with skim milk, a pear and a slice of honey ham lunchmeat. Nutritious, but not very exciting.
d_redguy, on the other hand, had a ham, swiss and brown mustard sandwich- baked on organic whole wheat- and a tossed salad with ranch dressing. He also had a cup of fruit cocktail and coffee. I hand-deliver his food to him at work and I feed him better than I feed myself. :rolleyes:
I live alone so I don’t actually eat “meals” per se, but about 5pm after swimming and weights I had an orange, grapes, a pear, a tortilla with melted cheese. Oh, and some sunflower seeds. Later I had fresh squeezed orange, grapefruit, lime, and lemon juice. That is so good! I really hate to cook.
Pizza - pepperoni (well done, pie cut) from Chicago Pizza Authority. Will have it for dinner again tonight (leftovers). Eh - I should’ve ordered the ribs…

Another chicken dinner: chicken in the pot, which was basically chicken quarters (whole chicken works as well) simmered in broth for an hour along with celery, turnips, a bit of carrot and leeks. You put chicken slices into a soup bowl/plate, place some veggies around it, and ladle about 1/2 cup of the broth (thickened) on top. Mmm, mmm, good. (For those of you doing Atkins, that ThicknThin stuff is a good thing.)
Tonight we will either have smothered pork chops or roasted chicken with mock mashed potatoes and gravy, a salad, and pumpkin mousse for dessert.
I ended up sawing the last hunks of meat off of yet another Smithfield spiral ham. Before that I had several spoonfuls of Breyer’s CarbSmart Chocolate ice cream. I eat of a lot meals consisting of those two items, I’m noticing…
