What's For Dinner Tonight: Episode 2021 – A New Hope

Hehehe, dinner tonight was more leftover Dominoes accompanied by beer and another hockey game. I only ate one slice cold, though (hey, two days old and cold is not excellent eats, even for me…ok, maybe spaghetti). I ate it while the others warmed in the toaster oven.

When I was a kid, one of my favorite lunches was slices of bologna rolled up around a sweet pickle spear with a toothpick holding it together.

Last night was a bowl of chili gifted to me by a drinking buddy. He made a huge batch on his Big Green Egg and had already fed both his grown daughters, wife and self. Was pretty good chili, too.

Tonight’s going to be breakfast for dinner: eggs, bacon, biscuits and hash browns.

Is there a name for “dinner that the chef throws together at last minute with whatever is at hand?” Because that was tonight’s dinner, and it was delicious! Snowy day so I had no interest in going out and made do with what I had.

There were leftover garlic mashed potatoes from prime rib the other night. There were frozen jerk pork chops in the freezer that I took out and thawed in a few hours. So I fried up some onions and simmered Bush’s Homestyle beans with the fried onions and barbecue sauce, baked the jerk pork chops as per previous recipe (14 minutes @ 425F then letting sit for five minutes works great for these) nuked mashed potatoes, ladled them with a bit of Greek salad dressing, garnished chops and potatoes with freshly chopped scallions, and sat down with a big glass of Cabernet. Definitely one of my better creations, and completely unplanned!

Thai takeout: Basil Krapao Chicken + Fried egg - Ground chicken stir-fried with fresh chili, garlic and Thai basil leaves, topped with a fried egg.

I love hot pizza. I love cold pizza. My husband thinks I’m crazy to eat pizza cold, but there’s a whole different set of flavors that comes out to me - almost like having a whole new delicious food.

Tonight was a simple chicken salad sandwich and black bean soup.

Low and slow roasted pork country ribs, potato salad and some canned baked beans. My wife’s reward for working on the taxes all day.

Some of my most impressive meals have started like that. Cheers!

Totally agree. Part of what I judge pizza on is how well it eats cold the next day.

Tonight was Italian sausage spaghetti and garlic bread. So, I’ll have leftover cold spaghetti tomorrow!

Agreed as to cold pizza. Hot or cold, though, I like to heat up some spaghetti sauce into which to dip the crusts.

Tonight: ramen noodle soup, hot fresh crescent rolls and a glass of ice water. For afters, some Girl Scout lemon cookies with a dab of lemon curd on each, and a glass of milk.

Gilding the lily, there! Sounds great!

Dessert tonight was fancy prunes with gorgonzola.

I made a chicken liver pâté and a big salad. Sauvignon Blanc to drink.

I’ve got some beef stew in the oven. Will need to add the taters and carrots in an hour and a half or so.

Calzones made with frozen pizza dough and, as an experiment, Bacon Cinnamon Rolls.

Grilled ham steak and some beans. Makers 101 to drink.

I made a pot of small white beans and they are yummy. I put in what I thought might be a little too much celery seed, but it wasn’t too much at all.

Added some cornbread slathered in melted butter and honey.

I want to eat all over again.
