My gf is low carbing this week. Last night she made Vietnamese Beef Tips. Very good. As a side, I made us each a Dukan Pancake (equal parts Greek yogurt, egg whites, and oat bran mixed and cooked with green onion added)
Fried catfish sandwiches, coleslaw and sliced apples tonight.
Black beans and rice. Lemon bar for desert. Drink of choice-water.
Hehehe, tonight was a light dinner. Salsa (wonderful HEB serrano salsa) and chips, a couple of HEB habanero cheese snacks, and some beers over a very good hockey game that my side lost in the last seconds. A pretty good dinner, to be honest.
My gf is still low carbing. I grilled turkey breast cutlets and made a chicken liver pâté. My gf didn’t like the pâté, but I made a small amount (1/4 pound livers, one hard boiled egg) so I ate it all.
Mac & cheese with peas and tuna. Looks a little odd as the open bottle of wine turned out to be red, not white, but what the heck – the sauce still tasted good.
All alone for dinner tonight, so I grabbed al pastor tacos from the gas station across the freeway from my office. Mmmmmmm
Kung Pao chicken, rice, and shrimp spring rolls. Classic!

Continuing with low carb meals, last night I made an appetizer of Shrimp Cocktail sans sauce. Then Sashimi; Yellowtail (Hamachi), Yellowfin Tina, King Salmon, and Pickled Mackerel.
My gf did not like the pickled mackerel, which meant more for me!
Closed at work and quite tired, so I made Dumb Soup ™ which is a handful of mini pasta and some random seasonings in a large Pyrex measuring cup filled about half-full of boxed chicken broth. Nuke for five minutes while surfing the Dope, let sit for a minute or two to cool slightly.
Some Ben & Jerry cookie dough ice cream to follow.
We continue with the low carbing. Last night I roasted a huge (7 pound) free range chicken. We had the breasts, the dogs had the legs, Rocco had a wing. There is leftover chicken for everybody.
As a side I made faux stuffing. Sauté onions and celery, add sage. Cool and add that to a beaten egg, oat bran, and Greek yogurt. Cook it like a pancake.
My gf was complaining about all the chicken liver dishes I’ve been making. So for an early appetizer I made Rumaki. I made hers with pineapple in place of the chicken liver, then she traded me one of hers for one of mine.
Just made a fresh batch of cole slaw, so tonight will be Fine Dining - fish sticks and slaw with scratch tartar sauce.
The lemon taste of the cookies alone isn’t quite strong enough.
Tonight: baked salmon, noodles with butter and grated parmesan, a tossed salad with Newman’s Own raspberry vinaigrette, and a glass of ice water. Later, two cupcakes with chocolate frosting, in a bowl with raspberry jam and vanilla ice cream, and a glass of milk.
Something simple. Sloppy joes, with water. 4 of em! Klondike ice cream sandwich for desert.
A repeat of leftover chicken in mole sauce and an IPA. I love mole sauce.

Today was husband’s birthday and he wanted to go to a brewpub in the next town over that we hadn’t been to before. We had deviled eggs topped with dill, a huge Bavarian style pretzel with beer cheese sauce and a pepperoni pizza. Russian Imperial stout for me and a cucumber saison for my husband (which was quite presentable).
