What's For Dinner Tonight: Episode 2021 – A New Hope

Tripels are not my go-to, but that beer would make a great dessert!

That sounds absolutely lovely! As an obsessive pasta lover, I will now fantasize about that heavenly ambrosia being served on top of spaghettini al dente!

Hah! As was I. My gf has us eating “healthy” in March, so we’ve been near zero carbs. Pasta would have been perfect last night.

Leftover spaghettini for lunch, the sauce premixed Italian style, with melted garlic butter and a good fresh-grated Parmesan. Still kinda hungry so had an early dinner of dim sum. Pork and vegetable dumplings, the kind with one flat side that you fry and crisp up in a small amount of oil, then add a small amount of water, cover and steam until the water boils away. Delicious! I anoint them with chili garlic sauce and then dip in soy sauce with chopsticks. A glass-covered fry pan is essential to see what’s going on when steaming.

Terriyaki chicken skewers in the air fryer. I haven’t done these before, so we shall see how they turn out.

Grilled cheese and bacon sandwiches, with bean and kale soup. Carrot sticks as our ‘salad.’

Last night was Ethiopian vegetarian platter. Tonight is leftover Ethiopian vegetarian platter. Probably tomorrow’s lunch, as well. The injera is extra sour this time and I really like it that way.

Rosemary roasted chicken breasts served with riced cauliflower. Merlot.

Stuffed shells, salad, and focaccia I baked this morning. Primitivo to drink.

I also bought a couple of Easter cupcakes that our coop makes every year - they roll them in coconut, turn them over on their tops and add raisins for eyes, an almond for a beak and a strip of icing on top for comb to make them look like chickens. They are both cute and delicious.

As predicted, leftover Ethiopian vegetarian platter. It tastes even better the next day. IPA for a beverage.

Currently steeping a “fancy” ramen cup (Mike’s Mighty Good brand) doctored up with an egg that’s poaching in the hot broth, some minced garlic, sliced scallion, hoisin, and a dash of sesame oil.

This is the “Spicy Beef” flavor. Never had it before - hope it’s good! I’ve had their chicken version before, which is delishush so we’ll see how this is.

Crispy chili on garlic pita chips as an appetizer.

I have fresh, good bread, so I might bust into some sardines or something later, since I do have a lemon. We’ll see.

ETA: just threw 2 garlic heads into the oven. The pita chips made me want MOAR GARLIC and that stuff is so good spread on crackers or toast!

Dinner was consumed on my way back to Dallas after seeing Dan Deacon in OKC. So, shortly before 1AM, I bought a pack of what ended up being really good beef jerky - Hardtimes brand made in El Reno OK. Fantastic stuff, just the way I like it - spicy, and dry as a bone. Now that I’m home, I’m nibbling on the remains of the pack and am starting to dig into the six pack of Coop F5 IPAs I bought at the same stop.

Bucatini with bottarga, homemade focaccia and blackberries. Cab to drink. One of my favorite meals.

Mmm, pork katsu sandos, with leftovers for at least two days

French dip sandwich with beef, grilled onions, blue cheese and horseradish sauce, plus au jus, of course. IPA for afterward.

This is the first time I’ve heard of this. It sounds great!

Last night: salmon grilled on a cedar plank, grilled asparagus, and cous cous.

Tonight: Thick cut pork chop, roasted potatoes, and brussels sprouts.

From the Turkey Farm, we had a smoked boneless turkey breast, which I heated, carved, and served with braised carrots and fennel.

I use the recipe from Bourdain’s Appetites cookbook, subbing in bucatini for the spaghetti because I like it better. It’s dead simple and delicious.

I call bucatini straws. Great alternative to spaghetti.
