What's For Dinner Tonight: Episode 2021 – A New Hope

Baked cod fillets with miso/teriyaki. Chocolate brownie and oatmeal stout for dessert.

Stuffed shells, spinach souffle and cucumber salad. It’s strawberry season here so fresh strawberry cake with whipped cream for dessert.

Sous vide rare half pound ground steak burgers with Gorgonzola and pickled onions. A small side salad. Southern Tier 2X IPA to drink.

We decided to make home made El Pollo Regio. Chickens are currently smoking and the grilled peppers and onions are done and holding in the smoker as well. We’re still about a half an hour away from dinner, but it smells delicious. I plan to eat a drumstick and then make a couple of chicken tacos with a side of beans.

Popcorn shrimp, the last of the cole slaw and a gin & tonic. (Note to self: that’s the last of the cocktail sauce. Put it on the shopping list.)

I made this again. I usually make a pot of this about once a month. I’ve started adding corn to it as well. This time when I was taking ingredients out of the fridge, I spotted a jar of spicy honey mustard so I added a tablespoon of that.

At a friend’s “MexiCali Grill” we had Smashburgers, which were fucking amazing. Two barely medium, dripping grease, patties with lettuce, tomatoes, pickles, and guacamole. I could feel my arteries hardening. Soooo good. With chips and freshly prepared salsa.

Heh. We stopped at my friend’s restaurant on our way to a brewery to see a band. Turner’s is a Pittsburgh tradition. I love their iced tea.

At the brewery we saw my buddy Jimbo Jackson (of Jimbo and the Soup Bones) playing and singing with a guitar :guitar: shredder. They did a great cover of Love Will Keep Us Together, complete with the guitar dude wearing a captain’s hat.

Yesterday was the first nice weekend weather after weeks of unseasonable cold and rain. After doing some outdoor chores, I grilled some ribeye steaks and served them with garlic thyme smashed potatoes and roasted Brussels sprouts. We dined al fresco. It was a good day.

Grilled some salmon, served with riced veggies. For dessert I cooked up some rhubarb and strawberries (with no added sugar) and served it over angel food cake. Mmmmmmmm!

A Reuben sandwich, fries, and an IPA.

Chili size, lots of onions. Washed down with a celebratory Manhattan.

Cheesy chicken bake with a side of cucumber salad. Snickerdoodle ice cream for dessert. Purple Mt. Dew to drink.

Spaghetti. Ah, but what spaghetti! Spaghettini a la Wolfpup. Cooked al dente, served with my newly discovered gourmet pasta sauce from Montreal, a rich tomato sauce simmered with chopped mushroom and mild Italian sausage, which I further simmer with lean meatballs made from a mix of veal, chicken, and beef. Garlic bread and Caesar salad on the side, with lots of fresh-grated Parmigiano Reggiano for both pasta and salad, and a very nice California Cab of the kind that I save for special occasions.

Flounder topped with a panko/romano cheese/cracked black pepper mix, snap peas and salad. A glass of rose with the meal and some dry cider afterwards.

Thai chicken wrap and homemade lime-ginger soda (sugar free).

Lamb meatballs with tzatziki sauce, spinach rice. It was a late dinner, I almost bailed out but went for it, I had all the fresh ingredients. Fast assembly, Homemade, flavorful simple,yes leftovers!

Burgers on the grill. I’d made coleslaw and potato salad, figuring we’d have one or the other. Instead we had a bit of each.
