What's For Dinner Tonight: Episode 2021 – A New Hope

Oven-roasted black cod drizzled with kecap manis (Indonesian sweet soy sauce). With kale salad.

Never heard of it before, but I may need some in my life!

Last night: Caesar salad, pork loin, mashed potatoes and (inedible) roasted brussels sprouts, with a glass of ice water. Later, two cups of coffee with sugar, and two small lemon tarts.

Stuffed shells, fried chicken, stuffed cabbage, rolls, and salad.

Roast chicken, cornbread, clementines; asparagus for me, early peas for my husband. Chardonnay to drink and strawberry ricotta cake with whipped cream for dessert. Excellent.

And again.

Baked salmon, polenta and braised mushrooms, with a glass of ice water and two cups of coffee.

Chicken and cheese quesadillas and they were delicious!

Fish tacos made with black cod, cabbage, salsa with peaches, guacamole, and garlic aioli. Sides were refried beans and roasted asparagus. For dessert, Mexican chocolate.

Long day on my feet. Snacking on some shredded chicken in jarred gravy (why? because I CAN! muah-hah-ha!) and shortly will have a freshly-toasted baguette, with brie … and likely more gravy.

I think a nice hot cuppa tea to accompany will do nicely.

There’s coffee ice cream in the freezer, if I get ambitious enough to want dessert.

P.S. plus a couple-or-three of those little frozen cream puffs.

Dinner out last night at a German place. I had a small plate with smoked trout deviled eggs, diced smoked salmon, pickled beets and slaw. Cheese spaetzle as a side, which tasted just like a German version of mac n cheese. Dessert was an ice cream sandwich which was obviously meant to be a take on Black Forest cake - cherry ice cream with chocolate/cinnamon/ginger sandwich layers. Rose to drink.

Husband feasted on plain spaetzle and schnitzel.

It was all very good, but pricey, and minimal table service - basically you order everything on your phone and they bring it to you. Pay by phone as well.

Last night I sparked up the charcoal grill for the first time this year. A jucy lucy burger, TJ’s unusual cheddar inside, provolone on top, and asparagus tossed in a balsamic glaze… Was quite good.

Yesterday we decided to get sandwiches from JImmy’s Food Store. I got an Italian Stallion and my sweetie got a 6" muffuletta. We each ate half of ours for dinner, and half of the other’s sandwich for lunch today. We also got a prepared vegetable lasagna for dinner tonight.

The sandwiches were wonderful, the lasagna was “meh” - not enough spices and too much liquid from the vegetables.

Mother’s Day dinner at my MIL home consisted mostly of Coors Light beer (her favorite). When I realized nobody was going to make dinner, I made omelettes for everyone. And toast.

At least it was cheap, easy, and absorbent!


Grabbed 3 steak tacos from a local joint. (Rosita’s if you’re in the mood for absolute hole-in-the-wall goodness in the Heights of Muskegon.) Plus a side of their lovely refried beans, which - if you ask for a small side - comes in this enormous clamshell fit for a queen.

Hehehe, grim, but true: after my mother’s funeral, we had a dinner where at the end everyone present ordered the largest Coors Light they could stand to drink. Then they had to consume her favorite beverage in her favored manner, through a straw. IIRC, I choked down 32oz in her honor.

In slightly less grim news, tonight’s dinner was a round of HEB deli corn chips with their serrano salsa, plus a couple of HEB cheese snacks. Think of it as delicious deconstructed nachos. A few El Chingons and a hockey game to wash it down.
