What's For Dinner Tonight: Episode 2021 – A New Hope

A delicious tofu curry that used up all the veggies that needed used up. Iced vodka to drink.

Last night’s dinner was Deconstructed Cabbage Roll stoup from the freezer. Chased with a gin & tonic.

Eckridge cheese filled sausage, saurkraut, and desert rice krispies with almond milk.

Bratwurst and spaetzle with sauerkraut for the husband and red cabbage for me. Cab to drink. Strawberry cake with strawberry sauce for dessert.

Tostado casserole, I use the crispy fried tostado shells from the dollar store. The others just soggy up

I grilled a huge family pack of chicken thighs, allowed them to cool, then diced them for dog training treats.

One thigh went atop a big salad I made for my dinner.

Loaded tots with bacon, cheddar cheese and ketchup, washed down with a Truth IPA and then some ice water. Later, some Irish-whiskey chocolate cordials and a glass of milk.

Tonight I’m grilling an Aldi’s Mediterranean herb salmon filet, steaming baby bokchoy and drizzling a soy/lime/chili sauce over it, and stewing some just picked rhubarb with a pinch of cinnamon, a splash of lemon juice, and zero sugar. I love rhubarb full on tart (gf will add some sugar to hers when I’m not looking).

Sipping vodka while everything is working.

Egg casserole, bacon and blueberry pancakes.

Chili dogs - Nathan’s bun-length, stripe of deli mustard, ladle on the Tony Packo’s chili, smother in onion. Chomp, chomp! Chased with a La Croix Orange.

Iceberg wedge salad with crabmeat, blue cheese dressing, bacon crumbles and chopped hardboiled egg, then a cup of seafood bisque, with ice water and a glass of Whitehill chardonnay. Later, some decaf and two scoops of mango sorbet.

Huevos ranchero with peach salsa, and an IPA.

Stuffed eggplant, tabouleh, and air fryer pea pods.

We were going to get a take out pizza, but our favorite place wasn’t taking take out orders (for whatever reason, I’m not sure). So, umm, we decided on two Quarter Pounders with Cheese.

Don’t look at me like that. It was really pretty delicious.

Spicy pork udon bowls and shrimp egg rolls.

Dan Dan noodles again!

Too tired to even scramble an egg after work, so I’m simply having slices of sourdough, topped with alternating:

  • chili crisp
  • roasted garlic
  • real honest-to-og caviar

(Hey, I like big … flavors and I cannot lie!)

The caviar was a splurge; I haven’t had the real stuff in years, having to settle for that weird vegan seafood “caviart” stuff.

But I had the opportunity to afford a small jar of red lumpfish eggies, and o.m.g. I’d forgotten how good it is! So salty, fishy and briny in a lovely way … what a treat.

The chili crisp is addictive, too, and it looks like I already need to get another jar!

We made this again, but still do not have a name for it. I grill a nice salmon filet while my gf makes a white sauce. Meanwhile water is boiling for rotini pasta. The salmon gets broken up into the pasta and white sauce. Mmmmmmm.

A big glass of iced vodka to drink.

Had a Rachel pita; pastrami, swiss, Thousand Island and slaw. Side of Potato salad. Ice cream for dessert.

Shrimp Étouffée, and controversy. It was good, but served without rice (carbs). And Shrimp Étouffée without rice just made me think about how much better it would have been with rice.

My gf asked me to make the roux, as I’m the one who makes the best roux (and risotto).
