Hmm, yes. Rice is very carby, BUT the etouffee sauce that soaks into the rice melds everything together and makes it worth eating. I’m not crazy about rice myself for other reasons, but I would still have a little with etouffee.
I made rouladen for the first time tonight, to go with the rest of the sauerkraut and red cabbage I’d made earlier. Came out very well - the gravy was especially good and I’ve got enough of it I can use it for something else later.
Gumbo with smoked chicken and andouille sausage, roasted Brussels sprouts, and an IPA.
Frozen chicken breast tenderloins, and frozen broccoli. I poured some olive oil, kosher salt, and pepper into the bag of broccoli and kneaded it. The chicken got kosher salt, pepper, and turmeric. Into the toaster oven for half an hour. Good stand-by for a solo meal. (The Wife had a TJ’s kebab on a Carb Balance Spinach Herb tortilla, and spic spiral Fritos.)
Marinated turkey breast tenderloins (Albuquerque Turkey) on the grill. Served with riced cauliflower.
Shawarma with yogurt sauce, grilled onions and tomatoes, french fries with ketchup, and an ice water. Later, a Starbucks iced mocha.
Fried chicken, green beans, cheese mashed potatos. Water to drink. Walnut brownie to follow.
The rest of the rouladen, red cabbage for husband, asparagus for me. Bowls of blueberries. Rhubarb mini-pie and pear cider for dessert.
Oven bbq chicken and whatever leftovers I can scrounge from the fridge. Looks like enough kale for a salad. With an IPA.

T-bone steaks marinated by a butcher, grilled rare. Steamed asparagus. Southern Tier 2X IPA. The steaks were great, but expensive. The butcher has them in the marinade and I always wonder how long they’ve been in there.
Cassoulet with a gin & tonic.
Salmon grilled on a cedar plank with some dill and lemon slices, grilled asparagus (I think I managed to snag the last bunch of asparagus from the farmers market this morning) and some inexpensive rosé wine I picked up at Trader Joe’s this afternoon. And maybe some carb to go with them, I haven’t decided on that yet.
There’s a good butcher shop in the same shopping center as Trader Joe’s, so I popped in there and picked up some babyback ribs to smoke on Memorial Day, and a thick cut pork chop for tomorrow night.
Mmmm, pepperoni, jalapeno and mushroom pizza from South Polk Pizza.
Fried chicken, stuffing and hash browns with gravy, and an ice water. For afters, a root beer float.
Found “reasonably” priced King Crab; the big chain market here has it in their carriage trade locations for $50/lb. Yikes. But the local Sprouts had them for $27/lb. Still spendy, but not stupid spendy. Yum.
I attended an event tonight at a pub that specializes in Cajun dishes. I thought we’d be ordering our own dinners at our own expense but instead the serving staff were circulating with a variety of hors d’oeuvres that were mostly miniature versions of their menu dishes, which was a pretty nifty tasting experience, especially because all the stuff was absolutely superb. Things I remember having:
- Toasted bruschetta drizzled with balsamic
- A cup of Creole jambalaya (tiger shrimp, grilled chicken, andouille sausage, peppers, and tomato on Creole style “dirty rice”)
- A giant Cajun tiger shrimp with chili sauce
- A small serving of fries and fried haddock drizzled with something mellow, possibly balsamic vinegar (best fish & chips I’ve had in years)
- A miniature version of their Carolina burger, with smoked cheddar, baby arugula, caramelized onions and remoulade sauce – as thick as a regular burger, but about half the diameter
I love tasty nibblies like that – so much more fun than a conventional meal!
At a local brewery where a reggae band performed, we had jerked chicken with rice&peas. Beer to drink. Felt like we were in Jamaica. 
It was our anniversary today, so we went to a local Italian place. Starters were tomato/basil bruschetta and burrata with tomatoes, pesto and walnuts. Husband had pasta with clams, I had butter chicken with arugula. Chenin blanc to drink, and the restaurant gave us a glass of prosecco as well.
When we got home we had the rest of the rhubarb pie and some peach ice cream I got from the farmer’s market.
The rhubarb pie was so good, but rhubarb is not easy to find and I don’t think I’ve seen any dessert made with rhubarb in a store or restaurant for years. Why is that??
Brats and grilled onions on buns.
It has a relatively short season. However, it’s easy to grow your own and can be chopped up and frozen. When I’ve had a lot of rhubarb and offered it to friends I learned that most people do not like it.
