What's For Dinner Tonight: Episode 2021 – A New Hope

Looks great!

A tossed salad with blue cheese dressing, fried cheddar cheese curds, shrimp with linguine, an IPA and a glass of ice water. Later, a piece of raspberry cheesecake and some decaf.

Chile Colorado with refried beans, Spanish rice, y muy cervazas.

We had veggie soup with some Amish made glazed donuts for dessert. Strange combination but it worked.

Mexican Street Corn Ribs: blistered corn ribs with mayo and Tajin and cotija

Spicy Salad: Tofu marinated with Sambal Olek and flash seared, spring mix blend with cucumbers, candied almonds, pickled carrots, daikon, and white balsamic sesame vinaigrette

Both were scrumptious.

Dallas filet - googling informs me this is a sirloin cut - with corn, sauteed onions, and rolls. (I treated myself to Texas Roadhouse.) Medium rare, and they did it right.

Back home now, thawing a few cream puffs for dessert. If it weren’t so damn hot, I’d make a nice cuppa tea, to help digest.

Does this mean corn on the cob?

A pork Reuben sandwich and fries, with an IPA and a glass of ice water. Later, a dish of mint chocolate chip ice cream.

Yeah, it was a cob of corn cut in half, then each half cut into maybe 6 or 8 long wedges.

Had a Mary Lou at one of our favorite Mexican joints. A what??

So good. I make them at home, but never as good as out.

I’ve never encountered or even heard of such a thing. Sounds good!

Spicy chicken sandwich, waffle fries and ketchup, with a lemonade. Later, banana custard with graham cracker crumbles.

It’s a way to upcharge an ear of corn.

It’s a way to serve it as a shared appetizer.

Just by happenstance, while in a supermarket for other things unrelated to tonight’s dinner, happened to see stuff that sends tonight’s dinner in a Mexican direction. To wit, a chicken burrito large enough that it may be the start and the end of dinner all by itself. Have had them before but not for awhile. They’re filled with chopped chicken breast, Mexican rice, lettuce, cheese, and IIRC some sort of sauce that makes them moist and spicy. They are huge.

Also on hand – but may not indulge in until tomorrow – seven-layer Mexican dip and tortilla chips. The dip needs to be really fresh and I got the large one because it was a fresh shipment, doesn’t expire until next Friday. Once I start scooping that dip with tortilla chips, it’s always a full meal!

Wish I had some margaritas to go with it! Martinis will have to do.

Had a hankering for Shepherd’s pie for some reason, so I made it. But I had neither carrots nor peas, so I chopped up red and green bell peppers and onions and cooked with ground beef.

It turned out delicious! Mrs. Solost pronounced it outstanding. Not sure what to call my version though— O’Brien’s pie?

That thread about shrimp recipes from a few days ago made me want shrimp tacos. This board seems to do that to me an awful lot. So I made these.

Last night I had a tossed salad with spicy garlic dressing, roasted chicken breast with mashed potatoes, gravy and string beans, and a roll, with a Heineken and an ice water. For dessert, two small tarts (one chocolate mousse, and one lemon with tiny toasted marshmallows on top) and decaf.

Caribbean restaurant: Caribbean jerk-spiced chicken with house-made West Indies sauce, Cuban black beans, rice, mango slaw, and a maduro.

Huge amount of food; I’ll be enjoying it for a couple of days!

Today is Sunday, so I made Anthony Bourdain’s Sunday gravy with Italian sausage and rigatoni (and I had some pork neck bones in the freezer leftover from the last time I made it).

I spatchcocked and jerked a chicken, cooked on the grill. Served with grilled corn on the cob and grilled peppers. Grilled peaches for dessert.
