WildaBeast, you sure must not live in a hot clime. I love that sauce, but never turn the oven on the summer for more than holding toast. Keeping the recipe tho!
Actually I do live in a hot climate. The kitchen did feel like a sauna for a few hours, but it was worth it.
My gf attended a work function last night, so I had leftover jerked chicken with parsley potatoes. Grilled a peach for dessert. Drank lemondrops.
I brought home an order of Jerk chicken with Cuban black beans, rice, mango slaw, and a maduro. It was so good I may go back and get another order today.
Just rinsed a big batch’o’mushrooms which will soon be sauteed in garlic butter, to go with a big batch’o’spaghettini. As endlessly discussed in threads about pasta sauces, I have several favourites, but after all the praise that Rao’s was getting in that thread about the Campbell’s takeover, I’m gonna try it again. I never considered it a favourite, but it’s been a long time. Rao’s marinara, to be exact. So, spagettini al dente, Rao’s, loads of garlic mushrooms, and fresh-grated Italian Parmigiano Reggiano. And a glass or ten of Spanish Tempranillo, which is now into a new vintage year that I haven’t tried before.
Couple of chicken thighs, baked atop onions and carrots and, like, three teeny-tiny baby potatoes, plus a crusty roll on the side. I’m snacking on the crispy skin right now, while the juices and veg boil just a few minutes longer with some butter and garlic.
Eagerly awaiting dipping hunks of the roll into the juice. My kitchen smells amazing.
I made us zucchini-corn-crab fritters in the air fryer. They turned out great. Served with tzatziki as a side/condiment. Pinot Grigio to drink. Grilled peaches for dessert.
Grilled chicken panini with melted cheddar and peppers, and a side of fries with ketchup. A Columbus IPA and a glass of ice water. Later, four homemade cinnamon cookies and a glass of milk.
Went to the nearby diner for a turkey melt - first time I’ve ever had one! - with kettle chips, and a salad.
Half the salad & half the sammich are sitting next to me, for Second Dinner later tonight.
When I shredded the HUGE zucchini for that nights fritters, I realized I had too much, so I saved half of it and last night I made zucchini-corn-crab fritters part deux.
This round I added Old Bay Seasoning, which brought out the crab taste. I think I’ve gotten my recipe (which I invented) down Pat. For dessert last night it was baked apples.
Hats off to my gf who never mentioned the fact I made the same dinner back-to-back.
My gf has been under some stress preparing Kizzy for her first agility competition this weekend. So, I made a “comfort food” dinner for her, modifying her mom’s recipe for Spaghetti Chicken (bolded because apparently everyone else calls or Chicken Spaghetti).
I grilled some chicken breasts and shredded the meat, used goat Gouda cheese, and small shells and bow ties for the pasta. Boy, was it good.
Tonight its pizza, stromboli and buffalo chicken dip for the game!
Fettuccini with pesto, tossed salad with raspberry vinaigrette, garlic bread, ice water and a nice Merlot. Later, some of my wife’s world-famous Ginger Drops and a glass of milk.
Last night was eggplant parmesan, green salad, and a glass of zinfandel from a winery just up the road in Placerville.
Tonight I’m making a simple bean soup. I’d been planning on making it anyway just to use the ham bone that’s been in the freezer since Easter, but coincidentally the weather is perfect today for making a pot of soup – cool and overcast and almost fall like (by NorCal standards).
I was planning on rib-eye steaks and corn onna cob cooked on the barbie tonight, but SWMBO said to wait until tomorrow on the steaks. She had some smoked salmon from the Lummi reservation. I made a ‘perfect burger’ (80% lean, 20% fat – it was on sale at the supermarket) with pepper-jack cheese on low-carb multi-grain whole wheat bread, some Baken-ets, and a glass of red wine. Now I’m having ouzo. The Wife is having Santorini Sunsets – Ouzo, orange juice, and grenadine on the rocks.
Cheeseburgers with a big kosher pickle, sorry, no draft beer. But glasses will be raised later.
Trader Joe’s has really good dill pickle spears. Lost of dill weed in the brine. Unfortunately, we’re out. But I have it written on the white board.
Felt like Indian food, so I made Chicken Tikka Biryani with Chana Masala as a side. Grilled peaches for dessert. Lemon drops to drink.
Last night my gf handed me a beautiful piece of meat. I think it was London Broil. She asked me to grill it medium rare, which I enthusiastically did. It turned out looking so good!
I have no idea how it tasted. Turns out she diced the meat up for use as special dog treats. Kizzy is in her first agility trial competition today.
We had turkey burgers and potato salad for dinner.
Your gf is a saint and will go to heaven!
(I myself have grilled bacon-wrapped filet mignon for Bernie, but mostly just on special occasions like his birthday. He certainly loved it, considering the way he virtually inhaled it, but I was never sure if he could really tell the difference between that and some ordinary rib steak or similar. But it made me feel good to celebrate special occasions.)
