What's For Dinner Tonight: Episode 2021 – A New Hope

I picked up a package of colossal shrimp (It’s not only an oxymoron, it’s delicious!), so tonight’s repast is colossal shrimp scampi on a bed of fettuccine with a green salad. Pinot Grigio and maybe a rye Manhattan for dessert.

H.E.B is selling big bags o basil so homemade pesto tonight.
Got a Black Box Chardonnay in the fridge, it’s not bad at all.

Homemade flatbread pizzas tonight. Coppa di Parma, mozzeralla, fresh basil, passatta and maybe a dash of zataar seasoning for me.

Burgers on the grill , I’ll try not to get overly fussy in the prep :slight_smile:

Baked salmon, couscous, green beans with butter, ice water. Then Lemon Ahead Cake* with vanilla ice cream for dessert, and coffee.

Mussels Fra Diavolo.

I was inspired by @not_what_you_d_expect’s Chicken Saag and made some tonight. It came out really good. Which is fortunate, because I made a lot. I’ll end up freezing much of it for work lunches.

Tossed salad with fried goat-cheese balls, buffalo wings with Ranch dressing, carrot sticks and celery slices, washed down with ice water and a Corona beer.

Older kids are all out, so sushi for Mrs Mollusc and I from Sushi Jin .

WHAT??? Are these a thing??? I need these! Do you buy them or make them??

Bought them at a restaurant. They’re not uncommon in funky Vermont eateries.

On my list of new food to try! Do you eat it with honey drizzled on it? Some of the links I see online include that.

No, no honey offered, although that might’ve been a good combination.

I’ve been meaning to make arancini (speaking of balls).

I’m planning on fish tacos, but we shall see what the day brings.

Either making chicken enchilada lasagna or reheating chicken vindaloo from a few days ago.
Chocolate ice cream cone for dessert.

I made potato salad and picked up some smoked turkey, so that’ll be my midday meal. But the star of the show (I hope) will be the Chocolate Posset with Blueberry and Orange Compote that I made.

My mouth is watering.

Cheese fondue with Gruyere , cherry tomatoes and baguette.

At a wedding reception this evening: tossed salad with maple vinaigrette dressing, beef tenderloin in a mushroom gravy, potatoes au gratin, asparagus and mixed vegetables, ice water, champagne and a choice of cupcakes. The lukewarm coffee was the only disappointment of the meal.

We made beer brats with grilled onions and grilled corn on the cob yesterday. Today was leftovers of the same. Delicious.
