What's For Dinner Tonight: Episode 2021 – A New Hope

Merde sur le bardeau. Aka biscuits and gravy, but I ran out of biscuits, so it was on toast. Added some veggies to the gravy. Picture an inside-out pot pie. Strawberry rhubarb pie for dessert.

Or a deconstructed pot pie. Sounds great. :+1:

I had some calf’s liver sauteed with Worcestershire sauce and butter. Yum. Now I feel kinda bad about eating veal. But not bad enough to finish it off tonight.

Something different. Turkey hotdogs with all the condiments and baked beans. Pinot Grigio to drink.

Mushy peas purchased in a can from World Market, small white potatoes and tomato/cucumber salad from a Virginia farm market and meat loaf.

First mushy peas since I ran out from the last purchase.

We had beef liver since it was the older than the calf’s liver in the freezer. We love liver and onions and gravy, with mashed potatoes and spinach.

Got a meatloaf baked this morning before it got too hot to cook, so dinner is meatloaf, mashed potatoes and a margarita.

Enchiladas and some really good watermelon tonight. A couple of cookies and some port for dessert.

Baked chicken cutlets in a spicy Texan marinade with some sprigs of thyme, with leftover baked mac & cheese from yesterday. A Spanish Tempranillo to drink.

Leftover chicken will be great with ramen noodles for lunch tomorrow.

I was visiting a friend out of town who lives near a wonderful little deli and I couldn’t resist dropping in. Picked up two Caesar chicken wraps, a tray of beef and rice cabbage rolls in tomato sauce, and a tub of their excellent tuna salad. The cabbage rolls are a sit-down dinner but the rest is snackin’ time! :yum:

Persian spiced eggs (basically a variation of shakshuka), potato rolls and watermelon. Some Portuguese red wine my husband picked up at the wine store today was our drink choice.

Sirloin is marinating in poke sauce (basically a spicy/sweet ginger-enhanced soy sauce) which will be seared & plated along with the last onions in the house that have just been sauteed in a bit more butter than strictly necessary.

There are a few crusty rolls lyin’ around, that maybe might could get thrown into the oven, if I need more butter delivery vehicles.

Leftover cake from a work celebration for dessert. It’s from a local bakery & is quite tasty.

Panko & Breadcrumb Wings with sweet chili dipping sauce.

How do you deep fry chicken wings so you don’t burn the panko and breadcrumbs before the chicken is full cooked? I’m glad you asked:

Pro Tip: coat the wings with flour, buttermilk (or egg, if you don’t like the buttermilk tang), then roll them around in a mix of seasoned panko and regular breadcrumbs. Press those crumbs on there like your life depends on it. Par-fry the wings for 3-minutes, then finish in the air fryer @375°F (190°C) X 10 minutes.

The result? Golden brown, crispy on the outside, and juicy on the inside. Pair with sweet chili dipping sauce and get ready for some seriously delicious wings. Bon appétit!

Walleye filets on the grill, served with “mac&cheese” only the macaroni was some strange little pasta things and the cheese was a complex cheese sauce my gf made.

For dessert (and as a condiment for the fish), I made Plum Chutney. I made it last year and it was a hit, so I redid it. The farm market had their plum harvest. Those plus lots of savory ingredients. Came out quite lovely.

Over the weekend I got half a rack of ribs and a smoked salmon fillet from a local truck. I ordered and paid early in the day and then picked up my food as he was winding down.

Since he was done for the day, he gave me a huge order of French fries. More than we could eat, even with Rocco eating his share. So I refrigerated the rest and reheated them the next day in the air fryer. Perfect!

Last night I jerked turkey breast tenderloins and grilled them. As a cooling side I made a salad with black beans, diced pineapple, minced jalapeños and onions, cilantro, lime juice, etc.

I’ve been over more often than usual visiting my friend out of town, and on the way home I always drop by the little deli nearby because their stuff is just so good. Just finished up the last of their tuna salad and got egg salad this time. I don’t know how it’s possible to make egg salad so yummy, but somehow they managed it. Made an egg salad sandwich last night and then immediately had to have a second one!

I also got their cabbage rolls (again), stuffed with beef and rice in tomato sauce, and a big Salisbury steak dinner with gravy, lots of mushrooms, mashed potatoes, and green beans that I’ll have tonight, with some garlic butter on the green beans. Salisbury steak doesn’t sound very exciting but based on how good their stuff generally is, I look forward to it. As a mushroom lover, I was attracted to the big pile of mushrooms on top of the steak.

Air fryers are great for that! The rosemary and garlic roast potatoes that I buy sometimes that call for oven baking are even better the next day reheated in the air fryer – really nice and crisp.

Played around with two nice eggplants last night. I sliced them into rounds, egg washed and into panko crumbs, then baked them on parchment.

Layered the eggplant rounds with ground sausage I’d browned, tomato sauce, Parmesan cheese, oregano. Topped with mozzarella and baked, then put under the broiler.

Served with a side of spaghetti with marinara. Pinot Grigio to drink.

It was funny, I started out thinking I’d make baba ganoush.

Picked up a box of beef empanadas and one of chicken on my way home from work, because tired.

The $$ → serving ratio was a bit :open_mouth: but hey, after working in a hot kitchen all day, I can pay someone else to cook for me, kinda.

Baked one of each. Am playing empanada roulette right now. (“What’s this one?”)

Turns out, there are no losers in this game. Both are delishush.

Boring dinners, but this morning I got creative with our breakfast.

When I made eggplant parmigiana the other day, I had a few leftover rounds of eggplant that were panko’d and baked. I made omelettes filled with eggplant rounds and a bit of marinara. Served with a side of baked beans (my gf had beans with brekkie in the UK and I occasionally do it).

Coffee for her, Dale’s Pale Ale for me. If you’re going to drink all day, youse gotta get an early start! Heading to the yearly Speal’s Guitarbecue later.
