Kitchen sink pizza today - meaning I felt like making a pizza, so what’s in the fridge I can use/use up as a topping?
So I made Mario Batali’s pizza crust and slathered it with some leftover pasta sauce I tarted up with fresh basil, dried oregano, hot pepper flakes and romano cheese. Toppings were chopped fresh spinach, a couple of leftover slices of cooked crumbled bacon, cut-up pieces of leftover sandwich pepperoni, leftover mascarpone cheese, and shredded Mexican cheese.
Ate at a Lebonese restaurant. I had lamb kebabs with grilled tomatoes, onions, and hot peppers, rice, and pinot grigio. For dessert, something I’ve never seen before: knafeh - made with a sort of white cheese encased in phyllo shredded wheat, with honey syrup.
Tonight I’m grilling a big ol’ strip steak for the two of us, along with asparagus and baked potatoes.
Your lamb kebabs reminded me of a few nights ago when I made jerk chicken kebabs and Rice-a-Roni and grilled veggies (including two small green bell peppers from what’s left of my garden!) It was fantastic.
My gf’s comfort food from her youth, Spaghetti Chicken. Delicious as always. Leftover cole slaw I made last week.
For dessert, grilled nectarines from our neighbor’s trees. I bought enough nectarines to also make a savory nectarine compote, using my plum compote recipe and subbing nectarines for plums.
Chicken Tinga (Spanish: tinga de pollo ) is a Mexican dish made with shredded chicken in a sauce made from tomatoes, chipotle chilis in adobo, and sliced onions. It is often served on a tostada and accompanied by a layer of refried beans. It can be topped with avocado slices, crumbled cheese, Mexican crema, and salsa.
I bought a package of Chicken Tinga (just the seasoned chicken) at Costco in May and made tacos with it - never had it before, but you’d written about having it in this thread so I got it because of that.
Tonight was an assortment of prepared foods from the Vietnamese deli. Fresh spring rolls with peanut sauce; little uncased sausages or meatballs (oblong, actually) with a green leaf of something wrapped around them served with a hot, sweet sauce; and some sort of meat (maybe the same sausage?) rolled up in an oiled rice sheet wrapper, served with nuoc cham. To drink I have fizzy sodastream water with cherry juice.
Well, Vietnamese got postponed. My daughter dropped in and cooked a big batch of sliders. She used Hawaiian rolls, toasted in the pan, and seasoned the meat by mixing in black pepper, chili pepper, garlic, and salt. Romaine and slice onion on top. They were great!
My gf requested a specific meal last night. She wanted a steak salad, but with shrimp instead of steak. So, air fryer fries, romaine, tomatoes, onions, avocado, and shrimp.
Last night I grilled steak burgers and served them plated on a leaf of lettuce, but otherwise bare.
Served with sous vide green beans. I mixed a little olive oil with salt/pepper, mashed anchovies, minced garlic, and crushed pecans. Vacuum sealed then sous vide at 186 F for 90 minutes. Delicious, still just a bit crunchy.
Today was burgers from the local pizza place because we got shellacked by Tropical Storm Debby and our power was out all day. Didn’t feel like pizza, but the pizza place was the closest place that was open.
Unfortunately for them, the ceiling was leaking so the front of the dining room was closed off and dish tubs were set up on the tables to catch the rain coming in. So we were treated to an unexpected ‘water feature’ while we ate our meal.
The burgers there are just OK but we’d basically not eaten anything all day because we didn’t want to open the fridge and when you’re really hungry everything tastes pretty good, lol.
Tonight was a slice of feta/spinach quiche and sweetcorn fritters. The latter is a recipe from the Game of Thrones cookbook. First time I made them and I will find it hard to not make them again tomorrow. Between the fritters and the crust on the quiche I quite got my share of daily carbs, which I’m keeping track of, rather than calories.
