What's For Dinner Tonight: Episode 2021 – A New Hope

A very nice tuna sandwich on toasted bread.

I’m going to make sweet & sour chicken tonight.

Spaghetti, garlic bread, salad, and good company.

My gf spent hours working on a new dish, and it was delicious. Persian Stew. Of course I made a comment about Persian cats.

Burger cooked rare on dark rye with French fries.

Dang, I’ve never had that, but it does sound like a tasty way to have a burger.

Tonight, a corn dog and a Superpretzel with mustard (I went fancy).

I’m afraid I’ve become addicted to that little deli near my friend’s place that I keep mentioning. They make such great prepared meals, salads, and sandwiches.

Yesterday I made a special trip out of town just to stock up on more stuff. Got more of their amazing egg salad, and prepared meals for the rest of the week including cabbage rolls in tomato sauce stuffed with rice and beef, glazed pork back ribs with roast potatoes (to be crisped in the air fryer), and Salisbury steak with mashed potatoes, gravy, and green beans. The usual problem with prepared meals is that they’re often crap, but this freshly made stuff is great and worth every penny including the cost and trouble of driving there! I envy my friend who lives literally a few blocks away.

There’s another store a little closer to me that also makes decent prepared meals, but they have a limited variety. I do like their roast chicken breast stuffed with garlic sausage and a side of Fettuccine Alfredo.

Last night I grilled Aldi salmon on a plank, while my gf prepared a puffball mushroom sauté with mushroom ravioli.

The puffball was incredible. We harvest one or two a summer. There are many more that we find, but they’re beyond their prime and insect infested. Yesterday’s was perfect.

Lime juice and vodka for me, Pinot Grigio for her.

Went to a small plates place tonight. We ordered lamb croquettes, haggis sausage rolls, seared scallops and an argula salad. Mr. romans had a glass of chardonnay and I had gewurztraminer. Pretty good meal.

Roast beef sandwich on dark rye with cranberry mustard and a bit of horseradish sauce, and an ear of corn.

Last night I grilled T-Bone Steaks medium rare and served them with squash that I cut into planks (like big steak fries) and air fried 400 degrees until almost scorched. Excellent!

Why T-Bones? My gf likes to eat the steak then have the dogs nibble off the remaining meat from the bone while she holds it. The dogs do a great job.

This afternoon I picked up a tray of marinated chicken cutlets that I’ve had before and they were delish! Marinated in a spicy BBQ sauce, and nothing easier than popping the aluminum tray in the oven for about 25 minutes. Not sure about sides – I could have Reses Main St Bistro Baked Mac and Cheese, or make a pot’o’beans (Bush’s Homestyle, of course, with sauteed onions and BBQ sauce) with homemade fries in the air fryer. I’ll probably just have one cutlet, the other can be had cold the next day with Korean noodle salad or cooked with ramen.

We had leftover Persian Stew and as is often the case, it was even better the second time around. I told my gf the lemon taste was very nice, turns out she zested two whole lemons for the dish.

I made Japanese Eggplant in the air fryer.

It’s getting difficult to do dinner lately. Lyme disease has really killed my sense of taste.

I love the process of cooking and experiencing people eating my food. If for some reason I lost my sense of taste, or was unable to eat, I’d still do dinners/breakfasts for my gf.

Roasting a spice-rubbed pork loin, along with roasted butternut squash from my garden. Still trying to decide what else I’ll serve in the side.

Yesterday I had a repeat of my roast beef sandwich on dark rye with cranberry mustard and a horseradish sauce, with an ear of corn.

I’m hoping the rain holds off…I’ve got some ribs dry brining in the fridge, and I want to put them on the grill. Quick peek at the weather map and it looks like it’ll be ok.

My gf requested “something we could eat with syrup” since she purchased this from a syrup dude:

So, I made breakfast for dinner. Toast done in the French style, pancakes, and waffles. All from scratch, all delicious. Breakfast Turkey Sausages as a side, and black coffee to drink. We both had difficulty sleeping last night.

I recently checked out the best little cookbook and I may have to buy it. The Tiny Kitchen Cookbook: Strategies and Recipes for Creating Amazing Meals ... - Annie Mahle - Google Books
