I also made a korean spicy pickled cucumber dish because we have a daft amount of cucumbers. It was quick to make and pretty good, maybe just touch too much salt, but will make again. The family who said they dont like pickles , like pickles now.
A tossed salad with blue cheese dressing; buffalo chicken wings with sliced carrots and celery on the side; two glasses of Truth IPA. Later, finished off the aforementioned big piece of chocolate cake.
I was given a tub of garlic green pesto by some friends, so I believe I will make some pizza dough tonight and let it ferment for a day or so and then make some charcoal grilled pizza this weekend. Time to test out the raised pizza stone idea. I’ve always ended up with over done crusts with the stone directly on the cooking grate, now I obtained a thingy that will raise the stone about an inch and a half over the grate.
Tonight will be salad and some homemade air-fried mozzarella sticks.
Chili, blackberries and crackers tonight.

I have a ribeye “marinading” under a few dashes of Worcestershire sauce and a heavy sprinkle of kosher salt. There’s an ear of corn waiting to join it.

We tried the Catfish Connection just around the corner from the house tonight. I’d noticed that the place has steady traffic coming in and out, so I expected it to be good. It was d-licious. Nice, spicy, tender fried catfish and shrimp with hand cut fries. Even if it wasn’t within walking distance, we’ll definitely be going back.

Oh man, I don’t think I can explain how dangerous and excellent it was, but I’ll try. It was at least the best catfish I’ve had since I was a child, and maybe the best catfish I’ve ever had. My darlin’ described it as “almost fluffy”, and she is right. I can just about remember eating catfish that good when I was visiting my uncle in Louisiana when I was around 10, but that may have been a dream.
If anyone on the SDMB ever comes to Dallas and wants to have it, PM me. I’ll give ya directions and meet ya there - but due to COVID-19, there’s still no eating there. We can come back to my house or eat it in the parking lot or something.

I saw an online menu item at a cafe of grilled cheese with rye bread, gruyere, and sundried tomatoes. So that will be tomorrow’s dinner if I make it to the store.

I have a couple of pieces of flank marinating is some lime juice, cumin , coriander , aji molido and paprika, so I will be making fajitas tonight. Also another batch of Korean cucumbers are being pickled.

Cold roast chicken sliders, cheddar cheese chunks, a glass or two of sauvignon blanc, and white chocolate chip cookies for afters.
Chicken nugget (chopped up nuggets, shredded extra old cheddar, cherry tomatoes, steamed noodles) salad with Ranch dressing, Nk’mip Merlot and pecan pie for dessert.
Breakfast for dinner: Whole wheat blueberry pancakes with fresh blueberry compote, turkey bacon, scrambled eggs, a bowl of fresh blueberries and blackberries.
