Tonight was BBQ chicken thighs and Mexican blend veggies. Just right for the first hot day of the season.
I went ahead and made Vindaloo curry as noted above, and as usual, I intended to add a bit of water to let the chicken simmer in the curry and finish cooking. Sadly, I accidentally added too much water, and the process of reducing the curry resulted in the chicken pieces being overdone.
Tonight will be the rest of the chicken curry on rice with tragically overdone chicken pieces. They’re not dry, of course, but tougher than they should be.
The good news is that the remaining chicken breast was perfectly done, tender and flavourful, and will be great in ramen and just as a cold snack. Or, if I happen to pick up a Caesar salad tomorrow it would make a great chicken Caesar salad, a meal in itself!
Late dinner tonight will be a humble ramen, but it’s always nice when I have all my preferred ingredients – Sapporo Ichiban Original, freshly roasted orange-curry chicken breast, cremini mushrooms, crispy green onions, soy sauce, and chili garlic sauce!
I don’t pop into this thread often, but I am highly intrigued by this jar. Can you share any details?
There are no secrets between us, but I often write enthusiastically about products that are local or regional without regard for the fact that they may not be available outside the area. Or maybe subconsciously it’s my revenge against those who write about stuff that I can’t get where I live! ![]()
There’s a nice small grocery chain here in southern Ontario called Longo’s which has a lot of great freshly prepared dinners and a hot bar and salad bar, and they’ve produced this great turkey gravy:
I just sampled a bit of the leftover curried cold chicken breast sitting in the fridge, and OMG! It’s so perfect that I’m not going to risk heating it even slightly, and besides, cold chicken is great!
So dinner tonight is baked mac & cheese with cold spicy curry chicken breast on the side. Weird? Seems like a comfort food combo to me, like a main course and an appetizer together.
I had several potatoes that were just starting to sprout at the eyes. They were otherwise firm and and in good shape, so fine to eat, but needed using sooner rather than later. So I decided to make a nice Shepherd’s Pie (OK, really ‘Cottage Pie’ before anybody corrects me, since I used ground beef
). I made a batch of cheesy mashed potatoes, browned some ground beef, sauteed a mirepoix of finely diced carrots, celery, onion, and green and red bell pepper in place of peas which I didn’t have (not a big fan of peas, anyway, TBH).
Assembled the layers in a pan with an extra layer of cheese on top, and baked until the surface was golden-brown. 'Twas a little ambitious for a midweek meal, but we’re in our last days of unseasonably cold weather-- supposed to be 80F by the weekend, a bit too warm for a Shepard’s / Cottage Pie, methinks.
I’m going to make “Mexican” beef and rice. I have some seasoned beans, corn, and spinach in the freezer from a previous meal. I’ll mix that with ground beef, onion, a can of diced tomatoes (or whatever cut of tomato I’ve got in the cabinet), a chopped jalapeno, garlic, and probably cumin and some additional hot sauce.
Cook that all up in a pan and serve over white rice. Grated cheese optional.
I had some ground beef that needed to be used, so I made meatballs. Toss them with some sauce and onto a chunk of baguette along with some provolone for a meatball sub. Little salad along side.
I’m overdue for grocery shopping but while rummaging in the freezer I noticed some nice steak & mushroom pies that I had frozen. So tonight will be one of those pies with fries, and gravy over both!
Chicken Kiev, roasted potatoes, and a green salad. (I sliced about a third off of the chicken because these were huge chicken breasts, so they were pretty much more than one serving.)
I should have pounded the chicken a little thinner; the breading got a little darker than I’d like before the chicken was cooked through. But otherwise it was quite good.

I had a craving for meat loaf, so I made a big batch and will freeze portions for future lunches.
Whats disappointing is the fact that green peppers don’t have much flavor anymore. I like green peppers in meatloaf, but it may as well be decorative. I think I’ll put it in the mini rants thread.
Having dropped in to my favourite little deli yesterday, I picked up so many nice things that my cup runneth over for about the next week or so!
Dinner yesterday was their exquisite Chicken Caesar wraps with Renee’s Mighty Caesar dressing dipping sauce. Tonight was traditional Ukrainian baked cabbage rolls in tomato sauce. Which were wonderful but so huge that there will be leftovers for another day. I could easily eat them all but then I’d expand like a balloon!
I made burrito pie the other night. It’s not haute cuisine, but it does taste good and makes a fine leftover.
Allrecipes won’t let me link the recipe for some reason, but that’s where I got it.

Continuing on with my haul of goodies from my favourite deli, late dinner tonight will be … pizza. Freshly made pizza with lots of mozzarella piled with goodies like pepperoni, green and red peppers, large mushroom slices, big circles of red onion, and who knows what else. I’ve had it before and it’s amazing! The better store-made pizzas are often better than any frozen ones, but this one is way above the others!
It surprisingly comes with no instructions, so I’ll wing it like I guess I probably did last time.
I arrived in London today for vacation. We didn’t have particular plans for today other than survive the travel. Dinner tonight: fish and chips. It was good- a generous portion well cooked. The breading was a little under seasoned for my tastes.
Meatloaf, with bananas and blackberries for dessert.
Sitting here yesterday, I was a little hungry, scrolled through the menus of the dozens of restaurants all around me for some takeout. Fried chicken, Chinese, hot dogs, burgers of every kind, salads, soups, seafood, pizza and chicken wings, six diners alone near me! Couldn’t make up my mind to save my life, so I wandered through the pricey grocery store to see what caught my fancy. Aha! Frozen tempura breaded (cooked) soft-shell crabs! On sale! And some crunchy onion rings. Home I went and it all went in the air fryer. Spent about $25, just for something different. Very good, I have some leftover to heat for lunch.
