What's For Dinner Tonight: Episode 2021 – A New Hope

Chicken schnitzel and a caprese salad. Local tomatoes and basil from my back porch, TJ’s fresh mozz and some nice balsamic, dash of salt. Might warm up a bit of baguette.

Fridays are charcuterie/leftover night. Eatin’ the scraps!

Last night ended up being grilled steak, roasted-on-the-grill baked potatoes, and grilled asparagus.

Tonight looks like poke bowls from a place down the street.

Can of soup (chicken veg with dumplings) and I baked my last :frowning: crusty roll for dipping, plus one more each of the beef bulgogi empanada & pea/potato samosa from my freezer.

Earlier I had a few Triscuits with cream cheese and bitter orange marmalade.

So basically, Low-Effort Snacking Night ™ around here.

Me and allthegood, my partner and housemate, do a cooking challenge. We roll dice. Depending on the dice roll, the person is assigned to cook an ethnic-cuisine meal (roll a single die to specify which), vegan meal, something from XX years ago same month (roll a single die to specify how many years back), something from our 4 and 5 star list of favorite recipes, something from one’s partner’s repertoire, etc etc…

We’ve been doing this for many years. My most recent was “make something from your partner’s repertoire” and I made chicken the way her family often did, wrapping chicken thighs in bacon and baking them in the oven, plus a pasta salad she’s done several times. Her most recent was to go back XX years in our meal-planning document and redo a meal from August of that year, and she picked a vegan sesame noodle salad with red zinger tea and potato chips (a picnic menu). It’s fun! And it prompts us to try new recipes.

We decided not get poke bowls, and did a repeat of the steak/potatoes/asparagus on the grill. Oh, and corn on the cob.

I tried to take a header down some concrete steps at my own hope yesterday (I managed to get away with just a minor sprain and a bunch of bruises) so I was absolutely not in the mood to cook.

So I got takeout for the wife and I from a nearby strip mall Chinese place that I had been before.

I was planning on getting the basic but solid shrimp fried rice, but due to increases in menu prices, it was only a buck fifty less than the crispy duck (1/2 a duck lightly fried). It ended up a touch overcooked/dry IMHO, but with some hoisin, it was still delicious. The combo also had fried rice, one eggroll, one crab rangoon and a small hot and sour soup, so I absolutely overdid it.

I had a big lunch, so tonight I’m just snacking on some curry chicken salad with crackers.

Since we’ve somewhat wandered off into the area of mundane takeout and frozen food things, I was quite impressed with this recent introduction in the President’s Choice brand of frozen dinners – chicken with lots of interesting spices over rice and red kidney beans:

Very tasty, mildly spicy. I bought one to try out, then went back and practically cleaned out the store! But since they’re frozen, today will be a turkey sub, and tomorrow garlic pork on rice noodles with chili garlic sauce.

Husband has lately decided that he likes meals with discrete parts. I’m finding this kind of difficult, as it rules out most of the stuff I make, like stir fry, casseroles, etc. So last night we had “deconstructed” chicken pesto linguine. I baked the chicken and served the pasta and some broccoli as side dishes. He liked it (hey Mikey)!
His name is not Mikey but it was impossible to say that sentence without it.

No-longer-vegan “instant” black bean soup (kielbasa & chicken demi glaze added) plus a spicy beef Jamaican patty/turnover in the oven.

Yum.

ETA soup had a bit of corn & spicy chili crisp added, too, cuz we gotta be extra.

For lunch today, I was intending to get an al pastor taco platter from Tacos La Gloria, my favorite local place. Unfortunately, it seems they may have closed. Best case, they may have moved to Duncanville. Not too far away from me, but I’d have to drive past dozens of taquerias to get there. I settled for Tacos al Chile, another store on the way back from the former Tacos La Gloria. They’re good, and they overload their tacos with filling and give you tons of cilantro, fresh onions onions and limes. But no pineapple, and no grilled onions. Tasty, but I still missed my old taco friend. I may be making more trips to El Tizoncito in the future.

For dinner, my sweetie wanted ice cream. It was a pretty cool day for recent days here (101F instead of say, 106F), but still hot enough to make that sound like a great idea. We went to the nearest store and picked up some Blue Bell Homemade Vanilla. I topped mine with Hershey’s syrup and crushed peanuts, and she topped hers with Smucker’s hot fudge. A satisfying, filling dinner on a hot day.

We both neglected to think of grabbing cones while we were at the store, and mocked each other for not having any situational awareness. Hopefully one of us will remember it when we make our weekly run tomorrow.

Tomorrow’s dinner will be some grilled pork chops with Montreal seasoning (I haven’t had it in ages, and fondly remember it). Grilled corn on the cob and home made milk bread rolls on the side!

When is it next his turn to cook?

Shrimp roll and corn onna cob. I got some “Argentinian red shrimp” from Trader Joes, and boiled them with a bunch of aromatics, doused in ice bath, stir with a mayo/lemon juice/spices dressing, tossed onto a top split toasted hot dog bun with some butter lettuce and a bit of fresh tomato.

That sounds delicious!

Tonight was BBQ on the grill: chicken drumsticks and drumettes, asparagus, and corn on the cob. The chicken was marinated in and basted with Stubb’s BBQ sauce mixed with cream soda, which was sounds awful but was surprisingly good. For dessert, plums from a neighbor’s tree.

I’m going into a busy fall where I might be home for an hour between jobs, or might not bother. So we’ve got some meal-prep going (started strong yesterday, we’ll see if we sustain it through November). This recipe for lentil salad from the NYT. I made the recipe pretty much un-altered, and it’s very delicious. Also, my version looks pretty much like the photo in the recipe, which isn’t always the case. I appreciate the truth in advertising. :slight_smile:

Quesadillas - black bean, corn, spinach, jarred hot peppers, and a cheddar/jack blend.

These will be serving as at least half of my lunches and dinners through Friday (with some augments).

Once again, way behind on grocery shopping, so have to forage in the freezer. Hark! I scored President’s Choice beer-battered haddock last time, which is way better than the regular stuff. So tonight will be a fishy dinner, lots of clam juice delivered via Caesars, and then crispy haddock and fries with all the appropriate garnishes. Traditional fish-n-chips, IOW.
