I have some chicken marinating in lemon juice, s+p, olive oil. Contemplating making lemony pasta with chicken, but I am not hungry. Well, just got some new pans yesterday, I s’pose I’ll try them out. At the worst I can take stuff for lunch tomorrow.

Baked chicken, Brussels sprouts, sweet potatoes, and banana muffins. I didn’t intend to cook an entire meal in the oven, but it worked out! ![]()
Moderately unhealthy treat!
I got some raw whole chicken wings (not sectioned) on sale for $1.99/lb on Tuesday, so I just dusted them with some cornstarch (crispier skin!) my homemade seasoned salt (heavy on cayenne and smoked paprika) and let them air dry a bit. In an hour (when utilities drop from their 4x price) they’ll get the air fryer treatment which will be served with some Trader Joe’s Peri Peri sauce alternating with my homemade peach habanero sauce.
Side salad of mixed greens, homemade croutons and sliced hass avacado.
The salad would be even better with fresh garden tomatoes, but I won’t have any of them until tomorrow.
I finally made it out grocery shopping today, so fresh stuff is available for dinner, plus the freezer is re-stocked. Lots more Caribbean Chicken!
A very late dinner tonight (I got up very late) will be a hot roast beef sub and a Greek Acropolis salad.
Picked up another tray of marinated curried chicken breasts and put in the freezer for later on. They’re not cheap but man, that stuff is versatile! It can be lightly baked and used to make Vindaloo chicken curry, or it goes well with baked mac & cheese, or in ramen noodles, or just by itself as a delicious snack!
The roast beef sub and salad dinner last night was supplemented later on by half of a roast turkey sub. Dinner tonight will be a Mexican beef rice bowl with lots of extra-chunky salsa, and later on possibly the other half of the turkey sub.
If you get the impression that my meals are a constant series of snacks, you wouldn’t be too far wrong, though the rice and noodle bowls are generally pretty filling. Tomorrow will be a fried pork and noodle bowl with chili garlic sauce – one of my faves.

I’m feeling really lazy today so I’m just going to go pick up a Mexican carne asada torta. Or a gyro. Choices, choices.
Last night my MiL came over with two Costco-sized flats of garden tomatoes (around 8-10 pounds or more). So tonight is some mixed greens (store-bought), croutons made with a heel of rosemary foccoccia (also from store), 3 of the fresh tomatoes (salt & pepper only), and some fresh mozz from the store, all with a very light drizzle of a good balsamic.
Who needs more?
I have a tray of sushi awaiting me. A tuna/mango combo, some salmon, and { fancy alert! } flying fish roe.
It’s hot, humid, and b.c. personal “stuff” I’m in no mood to cook, and needed an emotional treat.
But I have a healthy treat, too! At work, one of my managers made a big pan of her homemade Semi-World-Famous ™ raw veggie “pizza” birthday cake. She makes it every year for one of the other manager’s birthday, and it always disappears FAST.
It’s one of those big Pillsbury rollout, baked, then topped with cream cheese - the original recipe used IIRC sour cream, or possibly Ranch, and there has been a polite ongoing debate about what’s best - and then finely minced sweet peppers, radish, broccoli, cauliflower, plus whatever else was in the fridge.
I think one year she added a bit of green onion, which IMHO improves everything.
For dinner tonight I have taken out the marinated chicken breasts I froze earlier. Not exactly sure what I’ll do with them as there are several options, like VIndaloo chicken curry on rice or just having one with baked mac & cheese. I call them “curried” chicken breasts but it’s really a spicy marinade that seems curry-like, with hints of orange and rosemary. In any case, leftovers will be perfect for ramen noodles in the following days, along with fresh mushrooms and green onions!
I made a pot of green chili stew yesterday and we’ll be noshing on that for a few days. This is one of the best stews I’ve ever had and youse guys really should try it. Recipe here. I would note that you don’t have to go through all the roasting and peeling with the peppers. Just buy a jar of Hatch peppers at your preferred level of heat and dump them in.
Decision made – I opt for the lazy version of a late dinner tonight. No curry will be made. The marinated chicken will be oven-baked and the pre-baked mac & cheese will be nuked. Dinner will be mac & cheese and spicy chicken breast. There will be lots of leftovers including spicy chicken for ramen noodles!
I went out to a Greek restaurant and had a gyro (actually, more like a third of a gyro).
When I got home, waiting for me was some homemade Filipino beef and potato soup and Filipino beef-vegetable stew with gravy, brought over by a friend of my daughter. They were superb!
I had the spicy marinated chicken breasts with mac & cheese as planned. They were indeed spicy as expected, but also seemed to me to be overly salty. I wasn’t sure if it was just me or if the marinade was different, but it occurred to me that I had the same impression a while back of my favourite hot dogs. I think I may be developing an aversion to sodium.
I’ll carry through with my plan to have most of the leftovers with Sapporo Ichiban ramen, but will definitely go easy on the flavour packet which is a sodium bomb all by itself!
I had the second third of my gyro from last night, some plums, and a small slice of strawberry cheesecake.
Sapporo Ichiban ramen noodles, with the leftover spicy chicken, sliced fresh mushrooms, and the ever-essential green onions, with a light spritz of soy sauce and a small dollop of chili garlic sauce.
Tonight will be baked potato with stuff on it. My wife goes more for a ‘nacho’ set of toppings: cheese, salsa, beans. I don’t always love salsa, so might do something slightly different. Side of broccoli.
