Once again, in need of grocery shopping, so have to scrounge in the fridge. Tonight will once again be pizza a la Wolfpup – President’s Choice “deluxe” pizza (pepperoni. mushroom, green pepper) to which will be added a few more mushroom slices, chopped white onions, and garlic pizza sauce around the edges, and baked on a hot pizza stone.
Update: chicken thigh, on a bed of baby potatoes, garlic and an entire onion (I forgot to get a carrot) plus a buttload of butter, and a bit of poultry seasoning, is about to come on out. Once the skin is crispy - gotta wait for that!!
I didn’t use lean beef (at the current costs!!?!?), but an 80/20 fat content of a beef/pork blend, well drained. I added some extra serrano peppers, and garlic, along with a bunch of fresh tomatoes. Pretty good, I’ll need to dial it in some, like some options, the sugar is a bit too noticeable, but using half the recommended option should be good.
Because I had way too many carbs at the movies last night, no rice to go with, just a mess of mixed greens and the tomatoes to offset the funky/sour of the dish.
Pasta primavera. I can’t find the recipe at the moment, but it came from allrecipes. Egg noodles, zucchini, tomatoes, onions, peppers, etc. The most popular dish in my repertoire.
It was great! The only adjustments to the recipe were:
zested the lemon and used the zest as well as juice
didn’t have as much spinach as the recipe called for (bought a 10 or 11oz package and used that)
It would not have been over doing it to use the full 16oz of spinach the recipe called for. Or even more. Mine turned out less green than the picture, understandably as, in retrospect, I cut the spinach by 1/3.
Flavor was balanced, and with a generous portion of fetta and an egg on top it was a very complete, satisfying meal. I had two bowls and was stuffed. I would definitely do this, or variations on it, in the future.
I also loved the basmati. My spouse prefers long grain white rice as her go-to grain, but I’m glad I didn’t use that and got the basmati- to my tastes it brings much more flavor and texture to a dish.
A major grocery expedition is on tap for tomorrow, but meanwhile I have a supply of beer-battered haddock, so tonight will be crispy fish from the oven and fries from the air fryer, with malt vinegar and tartar sauce. Ice cream sandwich for dessert.
Yeah, I know, I’m boring. But I’m a creature of habit. Having learned how to properly crisp beer-battered haddock, it’s one of my faves!
Chicken pot pie, and a slice of storebought vanilla/chocolate swirl cake for dessert if needed.
Or on 2nd thought, possibly a few Triscuits with brie & marmalade instead.
We had cupcakes at work today (b-day, but not mine) and while they were homemade (by my boss’s mom, no less!) and absolutely delishush, they were … chocolate and vanilla swirl.
I made chicken cacciatore. it was good, but I was let down. I haven’t made it in ages, and I think it’s because I was looking so forward to it and it just did not deliver as I would’ve liked. I’ve got leftovers some dishes are better after sitting, I shall see.
I went to a nearby “European Market” today that recently started making their own delicious half sour pickles. They were out, but I did bring home some of their prepared cabbage (just cabbage, a little carrot, and a vinegar) and a new-to-me “hungarian style smoked sausage.”
So, while I stand here caramelizing onions for a dish for later in the week, I quickly made a plate of the cabbage, a sausage (cut into large pieces and cooked in a pan), basmati rice with added caraway seeds, and a drizzle/sauce of dijon mustard, honey, and paprika. Yum!
