Leftover paella for the second night. Now it’s gone.
Leftover cheeseburgers, potato salad and watermelon.
Tonight we interrupted the cavalcade of turkey and brisket sandwiches with pupusas, plantains and tacos from La Campiña Salvadoreña Dallas. It was delicious. We’ll return to finish of the brisket and turkey tomorrow, but it was a nice break.
More ham at my Moms. Today is day 5 that ham has touched my tongue and im still enjoying it.
My turkey finally got taken out of the freezer last night so soon we will be switching it up.
Chicken Vegetable Soup, with an incredible number of different vegetables. With CÎROC Apple Vodka on ice.
Potstickers again, with stir-fried kimchi and rice.
Was pondering chicken and biscuits, but I think I’ll end up with a cheeseburger. Perhaps some tots.
Hobo Dinners (burger patties with carrots, potatoes, cheese etc. wrapped in aluminum foil) Haven’t made these in forever!
Last night was grilled chicken and mash, night before was Mrs Molluscs empanadas, tonight spaghetti bolognese.
For new years we are looking to make som Tom Yam soup, stir fried shrimp and veg and egg fried rice .
Ceviche again!!!
This thread made me realize we have ceviche once a week or so. Tonight we used salmon, just for something different. Will not do this again, though.
Salmon Ceviche tastes great, but the color bleached out with the citrus marinade. Tilapia is way cheaper, and actually gives a better end result.
Have used Tuna, Snapper, Walleye (long story), Swordfish, Conch, and Mahi-mahi.
Finished the fifth of CÎROC apple vodka.
I can’t believe I didn’t mention scallop ceviche!!! Thinly sliced scallops make an incredible ceviche.
Just needed a very small quick dinner tonight. I put a Stouffer’s Buffalo Ranch Fried Chicken bowl in the microwave. Gotta love some modern frozen foods – they used to always be bland, but that stuff is hot enough to knock your socks off and get the endorphins flowing! Unusual for a mass-market product. Because it’s so hot, it needs to be washed down with lots of wine. My favourite Stouffer’s “Bowl” for a light meal!
Might be followed by some aged white cheddar and more wine.
The peach is good, too.
Last night I made Tequila Lime Shrimp over cheesy polenta. It was meh. I’m reading this thread for inspo. I’m bored with cooking. Maybe I’ll make ham and potato and corn chowder with some of the leftover Christmas ham!
Yesterday was the last of the duck breast and potatoes au gratin I made for Christmas dinner. We’ll finish up the leftover spinach souffle and parmesan pepper bread tonight and I’ll add steak and a salad to round out the meal.
Made a ground beef chilli. I Didn’t leave it to simmer long enough so it’s a bit thin, but tomorrow after a reheat or maybe after a trip to the freezer it should be in better shape. Added a couple of fresh chopped haberneros to my bowl for some extra spicy fruity heat.
A night resting in the pot and another hours simmer added the right body to it, and some fresh chopped habs,.
TURKEY! I finally roasted our Christmas bird this afternoon. It came out moist and delicious.
Coquille St. Jacques tonight, with cucumber salad and some homemade crackers with smoked salmon spread. Ice cream sandwiches for dessert and there will be a glass of champagne at midnight.
Last night was a tom yum soup, and a chicken and veg stir fry with egg fried rice, wine and champers for midnight.
Today, probably dry toast and ibuprofen
