Having drooled over @JohnT’s fried chicken (this thread) I picked up a prepared fried chicken dinner with cornbread waffles and hot honey sauce that I’ll have later tonight. From the same store that makes stuffed boneless chicken breast with linguini alfredo, one of my faves. I’m sure the fried chicken won’t be nearly as yummy as JohnT’s homemade delicacy, but will probably be OK. Most of this place’s prepared foods are above average, as prepared foods go…
Imade six tacos dorados with the leftover taco meat. I ate two, with hot sauce, sour cream, and cheddar cheese; and Wifey ate one, with hot sauce and cheese. So now the leftover taco meat is in leftover tacos.
I like to roll up leftover taco meat in a flour tortilla with a little cheese, and shallow fry them. Then cover them with chili.
Loads of steamed vegetables and mashed potatoes left over from earlier in the week so that has been mashed with spring onion, coriander, ginger, garlic, soy, chinese chilli oil and a tin of tuna.
It is now the basis for oriental fish cakes and they will be oven-baked and served with rice plus a “papaya” salad (which is actually shredded carrot but who cares?)
My current quick meal of choice is to take whatever leftover meat I have from a roast chicken, fajitas, meatballs, bolognese etc. Warm up a pitta, split it and shove the meat in there with chopped up tomatoes, onion, pepper plus cheese, jalapenos and whatever else takes my fancy.
Heat them up in a cast-iron frying pan until hot and crispy and serve with salsa and yoghurt.
Taco night! Soft tacos, grated cheese, rice, lettuce, spicy ground beef, tomato sauce and taco sauce, all washed down with a glass of ice water. Later, a mint chocolate chip shake.
I had some nice shrimp and was thinking about making Salt&Pepper Shrimp. Then I realized that although I love Shrimp Etouffee, I’d only had it in restaurants. So, I found a recipe and prepared it. It was awesome!!!
If you’re ever in Nawlins, go to Antoine’s in the French Quarter. Their etouffee is the stuff of legend, and deservedly so.
Yes!! One of the places I’ve had it. Mine was surprisingly.
Surprisingly…?
almost as good.
(I excel in roux)
Pepperoni pizza, Caesar salad and a glass of ice water. Later, chocolate layer cake with raspberry drizzles and a glass of cold milk.
It will be home made pizza , chorizo , jalapeno , olives and shrooms.
I was going to grill cow, but it has been a weekend of gardening and still working room by room on the upstairs decorating, so was too wiped out. Going to collapse in a chair with a Karbach Love Street
Huge porterhouse steaks, sous vide rare then quickly seared by torch. Served with sautéed fennel/carrots/pearl onions. Chinese Chun-Mee tea to drink.
Tonight was Leftover Night, so a motley collection: Mexican Taco chicken bites, southwestern seasoned chicken sausage, rice pilaf, spinach dal and the last couple slices of bauernbrot.
Baked sablefish tacos with mango-pea salsa and a salad. Dark chocolate for dessert.
Roasted cabbage and a turkey-ham loaf.
Last night I made baked tilapia with a parmesan garlic crust, and steamed broccoli with The San Francisco Treat.
Tonight I’m making baby back ribs in the oven, and mac salad and corn on the cob.
Leftover red beans and rice. I couldn’t find any decent sausage for it, so settled for a Portuguese linguica that I’d never tried. It isn’t great, but the dish is still okay.
I love tilapia. My latest way to enjoy it is to rub it down with mayonnaise, then toss it with panko crumbs, then air fry. Quick and easy. I also like tilapia ceviche.
